Grandma B's Bean Soup

Reviewed: Oct. 12, 2006
This was some SERIOUSLY tasty ham & beans!! I made it twice and the first time was a bit bland so the second time I took some other reviewers suggestions and used chicken broth instead of water (I used 2 cans) and put in 2 bay leaves. It was HEAVENLY. I couldn't get enough. I used a small turkey ham to cut back on cals/fat and it was delish. YUMMO!

The Ultimate Chili

Reviewed: Oct. 12, 2006
This is such a yummy slow cooker chili. Everyone who has tried it loved it. I used venison in mine and actually used almost 2 lbs - my hubby likes his chili really meaty. It was absolutely delish. Just made up some corn muffins to go with it. It smelled so good cooking all day!

Easy Baked Tilapia

Reviewed: Oct. 12, 2006
My husband would certainly give this 5 stars - he LOVES it. It's a mystery to me - he's usually a meat and potatoes kinda guy!! It has excellent flavor - I was liberal with the Old Bay. I couldn't find the vegetable blend they recommended so I used Italian style mixed veggies - which were quite tasty. This recipe is GREAT for a quick week night meal.

Red Skinned Potato Salad

Reviewed: Oct. 12, 2006
This was a decent potato salad - but not the best. Perhaps it could use a little more mayo or some mustard to bring it up a notch? I made it for a picnic and didn't really get any feedback. I think I might have undercooked the potatoes a bit - which might attribute to it being a bit dry.

Simple Pasta Salad

Reviewed: Oct. 12, 2006
I have gotten some RAVE reviews making this salad. Only gave it four stars because I did make some modifications. I used the cherry tomatoes and just cut them in half. I used one cucumber and added one green pepper. I didn't have the italian seasoning so I bought a packet of Italian dressing mix (zesty) and added that in along with the bottle of prepared dressing. I also added some jumbo olives that I sliced. Everyone just LOVED it and I think a big part of it was the "kick" that the zesty dressing packet added. I am now asked to bring it to every family event. My 2 year old can't eat enough of it when I make it!!

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 12, 2006
My husband said this was the best chicken & dumplings he ever had (shh...don't tell his mother) - Only 4 stars because I think the cooking time is a little off - or else I have a really good crockpot. Next time I will try them on low for maybe 6-8 hours. It cooked down and burnt on the sides too much. Also - I pulled the chicken out before I did the biscuits and shredded it and put it back in. You could pry just do this with a fork the chicken was so tender. This recipe is SO simple and deliscious!!

Pork Chop and Potato Casserole

Reviewed: Oct. 16, 2006
This was a decent recipe - a good starter. I added a few spices and some garlic and I still thought it needed a little something. I didn;t care for the potatoes - but that may have just been the potatoes I had - they tasted a little earthy or something - maybe it was the soup - next time I might try it with cream of chicken instead and see if I like it better. Definetely a good homestyle meal. I will make it again but try and tweek a little.

Mexican Casserole

Reviewed: Oct. 19, 2006
This recipe is DELISH!!!! It doesn't need any alterations. I don't like cooking my chicken in oil though - so I did cook mine a little differently. I put it in the crockpot in the morning with a can of chicken broth and let it slow cook all day. Then when I got home from work I pulled it out and it shredded beautifully. The shredded chicken really went well in the recipe!!!! And it made prep time nil for a working mom. I also used a whole pack of taco seasoning and it wasn't too spicey! Yummmmmmmmo!

Baked Orange Roughy Italian-Style

Reviewed: Oct. 27, 2006
YUM YUM YUM. This coating was DEEEEEEELISH!!! I didn't have romano so I just used all parmesian and it was so yummy. I didn't use the melted butter to save on cals/fat and I just sprayed my fish down with "butter spray" before dedging. I did have to cook a bit longer then suggested but I used two HUGE filets (over 1/2 lb each) - the smaller peices would have probably cooked in the recommended time!

Baked Salmon Fillets Dijon

Simple, quick & deliscious. I skipped the butter and just spritzed mine with "butter spray" to save big time on calories. The mustard was a great compliment to the fish.

This was super tasty and super easy. The only downfall was that is didn't "look" that appealing - but once people tasted it word spread fast and it was attacked! :)

Penne with Shrimp

Reviewed: Nov. 2, 2006
This was simple but it was a little plain to me. I added lots of extra garlic and some basil. I omited the wine because it already seemed a little too soupy. After tossing it with the pasta I decided it needed more substance so I put in 1 cup of tomato sauce. I didn't put the whole cup of cheese on it because I am trying to watch my wasteline - I let everyone sprinkle their own desired amount of cheese on. I used a bag of frozen shrimp because I had them on hand - just thawed and pulled the tails off and threw them in the last few minutes to heat up. My husband LOVED LOVED LOVED IT!!!! So even though I thought it was just so-so I am sure I will be begged to make it again! :)

AMAZING!!! This is the first time I ever made a roast and it turned out PERFECT!!! We had friends over and everyone LOVED it. I couldn't believe it - the most deliscious gravy just magically appeared when it was done!! I did use extra potatoes (yukon gold) and carrots and I threw in a couple of onions too. Other then that I followed the recipe to a T and I will definetely make it again and again!

Honey Glazed Pea Pods and Carrots

Reviewed: Nov. 21, 2006
THis was a great glaze - especially on the carrots. I wasn't crazy about it on the pea pods - but maybe that's just because I prefer carrots. I will keep this recipe and just use carrots next time! :)
