Super Sausage Gravy

I made this with Turkey Sausage. I was afraid there wasn't going to be enough fat to make the gravy but it turned out PERFECT. Make sure you get the flour stirred in and around the beef really good before you add your milk so you "cook" it a little. I used low carb milk. It was runny but after cooking about 8 minutes it thickened up BEAUTIFULLY. It was a lot of sausage for the amount of gravy - but that's how we like it. This was so easy. It deserves 6 stars for being so easy and extra yummy!!!

Creamy Rice Pudding

YUM YUM YUM!!! I LOVE rice pudding but finding a sugar free variety in the store is a challenge and expensive. This was SO easy. I used Splenda instead or sugar. In an effort to keep it super figure friendly I also substituted eggbeater for the eggs and used 2% low carb milk. I left out the raisins and let hubby and kids add them if they wanted. It was just such a yummy basic plain rice pudding. I liked it warm with a generous sprinkle of cinnamon. Hubby had a cold serving with raisins. Both of us couldn't get enough. And for a HUGE 1 cup serving mine only cost about 170 calories. What a deal!! I'll be making this a LOT!!!

Sloppy Joes II

So yummy!!! I use ground turkey and add a few shakes of Worshestershire to "beef" it up a little. I'll simmer for awhile or even transfer to a small crock on low for a few hours. I'll never buy the cans again!

Tasty Sweet Potatoes

The flavors were great in this. And I was looking for a good sweet preperation for sweet potatoes without adding all of the marshmallow and brown sugar that make it more like dessert!! But like other reviewers said - the timing was wrong. I ended putting them in the mocrowave for about 5 min to try and get them done after the timing in the oven left them only half cooked. Once they were finished they were delish!

Lentil and Sausage Soup

Absolutely DELISH!!! I took the water down a few cups and it was VERY heart - a nice stew!! I also added a lot more sausage. About 3/4 a lb but I halved the recipe - but I wanted it to be a nice hearty dinner on a cold winter day. The spices and tomatoes made this absolutely so yummy and very budget friendly!

Honey Glazed Pea Pods and Carrots

THis was a great glaze - especially on the carrots. I wasn't crazy about it on the pea pods - but maybe that's just because I prefer carrots. I will keep this recipe and just use carrots next time! :)

Caramel Pecan Pie

Hubby loves Pecan pie but I'm not into it. I tried this last year to see if it was a good compromise. I ended up eating more then him! I took it to my sister's for Thanksgiving and people were practically fighting over it. It was sooooo yummmy!! This pie is DELISH!!!!!!!!!

Kathy's Roast and Vegetables

AMAZING!!! This is the first time I ever made a roast and it turned out PERFECT!!! We had friends over and everyone LOVED it. I couldn't believe it - the most deliscious gravy just magically appeared when it was done!! I did use extra potatoes (yukon gold) and carrots and I threw in a couple of onions too. Other then that I followed the recipe to a T and I will definetely make it again and again!

Penne with Shrimp

This was simple but it was a little plain to me. I added lots of extra garlic and some basil. I omited the wine because it already seemed a little too soupy. After tossing it with the pasta I decided it needed more substance so I put in 1 cup of tomato sauce. I didn't put the whole cup of cheese on it because I am trying to watch my wasteline - I let everyone sprinkle their own desired amount of cheese on. I used a bag of frozen shrimp because I had them on hand - just thawed and pulled the tails off and threw them in the last few minutes to heat up. My husband LOVED LOVED LOVED IT!!!! So even though I thought it was just so-so I am sure I will be begged to make it again! :)

Great Pumpkin Dessert

Baked Salmon Fillets Dijon

Baked Orange Roughy Italian-Style

YUM YUM YUM. This coating was DEEEEEEELISH!!! I didn't have romano so I just used all parmesian and it was so yummy. I didn't use the melted butter to save on cals/fat and I just sprayed my fish down with "butter spray" before dedging. I did have to cook a bit longer then suggested but I used two HUGE filets (over 1/2 lb each) - the smaller peices would have probably cooked in the recommended time!
