About this Cook
I am a married mother of 3. I cook a lot, and most enjoy it when I have the time. My kids are very involved in sports and dance, so at times it is challenging to get a good meal on the table. I LOVE to decorate my home and yard. I am a registered nurse in a local large hospital and my husband is a contractor. It is great to have someone handy around the house.
My favorite things to cook
I love to cook pies. I love to grill in the summer, shrimp being my latest "thing" that I am mastering.
My favorite family cooking traditions
I will often have my kids pick out a meal that they have to help prepare. They go through cookbooks or my recipe box, I buy the ingredients and we go from there. We are very into seafood, and usually for each family members birthday meal the b-day person picks crablegs that we prepare.
My cooking triumphs
Banana cream pie...finally have a great recipe. Lasagne...made to my husbands specifications...not too much ricotta, heavy on the cottage cheese.
My cooking tragedies
Too many to list. I do remember the very first time I ever cooked. It was tacos. I got all the lettuce, tomatos, cheese and sour cream ready. I browned the meat and didn't know that I was supposed to drain off the grease. The tacos were literally dripping with grease. It was unedible.

Deep South Fried Chicken
This is same as my basic recipe. Sometimes I just use Wesson Oil. I always use my electric fry pan, as I am always doing large batches. Would use more seasonings and add paprika and garlic powder. I also soak my chicken in buttermilk for several hours (makes it very moist). And, the main key is to have your oil SIZZLING hot BEFORE you begin. This helps to keep the batter from falling off. Sometimes I just give the chicken a good browning on both sides and then pop into a 350 degree oven for 30 minutes or so to finish it. This is always helpful for large batches, if not enough room in fry pan.

Mari's Clam Lovers Chowder
This is wonderful. My only tip would be to use a very large pot, as it is a huge recipe. If you don't have a very large one, make just 1/2 the recipe.
