About this Cook
Mom and wife who loves to cook comfort food and try new things!
My favorite things to cook
I really love to cook everything, I just don't like to clean up the mess afterwards.
My favorite family cooking traditions
Swedish pancakes! My great grandpa, great aunts, and my mom all made these yummy thin pancakes. There was never a written recipe in our family it was just something they all new how to make from memory. When I was young it never occurred to me to make sure I knew how to make them. Sadly all my family members who could make them have passed away and I cannot find a recipe to duplicate the pancakes they made. I will continue trying but I urge everyone to make sure they know how to make favorite family dishes. Since my Mom has passed there are so many dishes I can't recreate and I miss them and her terribly.
My cooking triumphs
Homemade bread, fried chicken, and cinnamon rolls!!!!
My cooking tragedies
First attempt at fried chicken. Ended up with burnt and soggy on the outside raw on the inside chicken. Also ended up with fire department at our place for carbon monoxide but that wasn't my fault...I swear

Rob's Spicy Sweet Buffalo Chicken
I followed the recipe just the way it's written at first. However when I tasted the sauce it just tasted like soy sauce to me so I added more hot sauce. Also after tossing the chicken in the sauce I threw it under the broiler for a bit and I think that made it way better. I will make this again but I will use my own fried chicken tender recipe. I wasn't big on the flavors used in this one. It wasn't bad I just like mine better. Also I will cut way down on the soy sauce next time and continue to broil the chicken for a few minutes after covered in sauce. All in all this tasted a lot more like teriyaki to me than buffalo flavor. Still good and worth making though.

Artichoke & Spinach Dip Restaurant Style
YUM!!!! I can't give this enough stars! I'm a huge fan of a certain casual restaurant chain's spinach and artichoke dip but I hated getting it because it's so expensive. I came across this recipe and I wasn't sure about the alfredo sauce but thought I'd give it a shot. I made a double batch and used Newman's Own and Bertolli Roasted Garlic flavored Alfredo sauce in the jar. I also added a container of the philadelpia garlic cooking cream along with regular cream cheese as well. I did this so I didn't have to mess with roasting garlic but I'd still have the flavor. This stuff was so good I seriously gave myself a horrid stomachache because I could not stop devouring it. I did have to add a little bit of spices to it to give it a bit more flavor, I also added a smidge of sour cream too. Don't get me wrong it was good with out any additions, I just wanted it to have a little more kick. I can't remember what spices I used exactly but I just read over other recipes and incorporated a mixture of what they used. I took this with me to a family gathering and everyone loved it. It makes a lot though and I definitely did not need a double batch that's for sure. I will make this again for sure in the future. Right now I can't even bear to look at if since I ate so much of the darn stuff.

Tasty Baked Meatballs
Easy and good! Just got done making these and everyone in my family liked them except for my six year old who pretty much doesn't like anything. I made a simple gravy using just an envelope of brown gravy mix and about a fourth of a cup of sour cream and a dash of nutmeg. We topped the meatballs and our mashed potatoes with this gravy and it was great. I love these type of meatballs and not so much the ones you find in tomato based sauces. I find good recipes for these typed of meatballs harder to find. For me baking meatballs always makes the process easier so that's another good thing this recipe has going for it. I will be making these again for sure!
