EASY, TASTY, and HEALTHY! I made a few changes. I used a pound of whole grain spaghettti instead of the Udon noodles, so I doubled the rest of the ingredients. I used vegetable broth instead of chicken, used much more garlic then it called for, used a pinch of cayenne since I didn't have chili paste, omitted the green onions, and added steamed broccoli and browned tofu. My boyfriend added leftover shredded chicken breast to his. This is a great weeknight dinner!
