Sauceless Garden Lasagna

This was really good but not very filling. The vegetable mixture was so good that it would make a great salad on its own. It seems super tall before you bake it but it cooks down. I am going to double the recipe next time.

Grilled Tofu Skewers with Sriracha Sauce

Oh good Lord- yummy yummy yummy! I had plain Sriracha instead of garlic sriracha so I added a whole bunch of minced garlic. Used onion powder instead of fresh onion. After I tossed the tofu and veggies with the marinade I couldn't stop eating the raw tofu! The marinade is to die for! My carnivore husband went crazy over it too! Healthy and delicious.

BBQ Pork for Sandwiches

Whooaaaa... So if you can't tell by my screen name, I'm a vegetarian. I was planning a huge co ed baby shower luau and was trying to figure out a way to feed 30 carnivorous friends without breaking the bank. I used a 12 lb pork shoulder butt, 1 bottle of beer, and one can of beef broth and cooked it on low for 10 hours. Instead of bottled barbeque sauce I made my own Hawaiian bbq sauce with pineapple juice, teriyaki sauce, ketchup, fresh garlic, minced shallots, and fresh ginger. My hubby shredded it for me, I stirred in the sauce and refridgerated it until 30 min before the guests arrived. Heated it for 30 min in the oven, and served with mini Hawaiian rolls. It was a BIG hit! And so easy... If a vegetarian can pull this off, so can you!

Blueberry Cream Muffins

OMG, I just finished the first batch and had one straight out of the oven. Absolutely mouthwatering! I followed the other reviewers advice and added the sour cream to the egg mixture to make it easier. I also followed the suggestion of adding a bit of cinnamon. I added 1 cup chopped apple to recipe as well. I love that you can add or substitute almost any fruit you want and they would turn out great. This will definitely be my base recipe for all muffins. Any surplus of fruit I have on hand (pineapple, strawberries, apples, etc) in the future I will definitely try in this recipe. Maybe some nuts too? My only complaint is the fat and sugar content... they are rich and delicious for a reason! I used reduced fat sour cream. It slightly reduced the fat content.

Lisa's Favorite Carne Asada Marinade

This marinade is awesome! I also add Worcestershire sauce. I also use it for chicken, veggies, and even tofu! There have been a few times I didn't have any citrus and I substituted vinegar. It still tasted pretty good.

Peanut Butter Noodles

EASY, TASTY, and HEALTHY! I made a few changes. I used a pound of whole grain spaghettti instead of the Udon noodles, so I doubled the rest of the ingredients. I used vegetable broth instead of chicken, used much more garlic then it called for, used a pinch of cayenne since I didn't have chili paste, omitted the green onions, and added steamed broccoli and browned tofu. My boyfriend added leftover shredded chicken breast to his. This is a great weeknight dinner!

Portobello Mushroom Burgers

Really amazing. Even my carnivore boyfriend loved it. We technically doubled the marinade since we only used 2 portobello caps. I served it on foccacia bread with roasted red peppers, herbed goat cheese, and a mixture of mayo, lemon juice, fresh garlic, and paprika. We grilled the mushrooms on a charcoal grill which I think gives it a great flavor.

Taco Seasoning I

Perfect seasoning, so much better than that packaged . I double the recipe use half on lean ground beef for my family, and use the other half of the seasoning on Boca ground for myself.

Cheesy Creamed Spinach

I was excited about this recipe because of the high ratings, however I did not care for the texture of this creamed spinach. The flavor was good, but not great. This is one of those recipes that are not worth the fat and calories.

Hummus III

This was a very good basic recipe. I tripled the garlic, and added less tahini. I divided the finished hummus into 3 bowls and made a trio of hummus. The first was the basic recipe topped with paprika, the second was roasted red pepper, and the third was cilantro jalapeno hummus. I brought it to a party along with the baba ganoush recipe on here, and everyone loved it, especially the cilantro one.

Creamy Artichoke Pasta

Big Al's K.C. Bar-B-Q Sauce

So I'm a vegetarian. But I was looking for a barbeque sauce to make barbeque beef sandwiches with for my family. I slow cooked bottom round all day, shredded it, and then added this sauce. I served it with big kaiser rolls. I can't speak for myself but everyone loved it. They said the sauce was amazing!

Banana Crumb Muffins

Very good. Next time I think I will use less sugar. The ripe bananas are already very sweet along with the crumb topping so the muffins were a tad too sweet. I also might take some of the other reviewers suggestions and add chocolate chips to the batter.

Potato, Broccoli and Cheese Soup

Very good. I followed some advice by other reviewers and reduced the onion to 1 cup, and sauteed a couple cloves of crushed garlic with the onion. I used vegetable buillion instead of chicken and replaced 2 cups of water with milk. I added the broccoli to cook with the potato for the last 8 minutes along with 1 cup chopped carrots. I served it with cheddar flavored goldfish on top. Next time I am going to reduce the cheese by 1 cup, 2 cups is enough.

Zucchini Alfredo

This was very good and very easy. I used 2 tbsp butter and 2 tbsp olive oil instead of the vegetable oil and I added 1 cup chopped onion and twice the garlic. I added the parmesean with the basil instead of serving it on top. Great weekday dinner!

Chuck's Favorite Mac and Cheese

Very tasty. I was skeptical of the cottage cheese but it turned out great! Instead of normal cheddar I bought chipotle sharp white cheddar. The smokiness and spice of the chipotle really added a tasty kick! UPDATE- I still love this recipe, but I made a few changes. I use whole grain pasta. I also blended the cottage cheese with the low fat sour cream in a blender with a few cloves of garlic to get rid of the cottage cheese texture. For the bread crumbs I toasted bread and sprayed butter spray and garlic salt on it before turning into crumbs. With these changes it makes it much healthier but doesn't sacrifice taste!

Naan

ALMOST as good as the naan at my favorite Indian restaurant. I don't have much experience working with yeast and kneading and such so it was an adventure. I let the dough rise for an hour and a half the first time, and about 45 minutes the second time. I don't have a grill so I used a skillet.The first one I made wasn't rolled thin enough and wasn't bubbly. The rest I rolled as thin as I could and they were perfect. I taste tested the first ten and wasn't hungry for the curry I made! This recipe makes LOTS of dough so I only used about a 1/3 of it and froze the rest. I am going to use it as pizza dough as the others have suggested.

Spinach Enchiladas

Very, very good! My boyfriend and his 10 yr old son loved it and had seconds. I used regular minced onion instead, doubled the minced garlic, and added a little bit of minced canned jalapenos. (I like my food spicy!) I dipped the corn tortilla in a little bit of enchilada sauce before I added the filling. I also used low fat ricotta, sour cream, and mexican blend cheese. Helps cut the fat a little. I served them with the no-fry refried bean recipe found here, chips and salsa, and of course, Pacificos! It was a good (relatively healthy!) Mexican feast.
