Best Carrot Cake Ever

I made this recipe as written except I halved it (only 2 of us in this household!) and I baked it in a ring pan so it would be like my favourite coffee shop's carrot cake. And it really was like the coffee shop cake - amazing! This cake is rich and dense and so delicious. It is even better on the second and third day.

Red Velvet Cupcakes

These cupcakes had a lovely light texture and nice flavour. I didn't have a full bottle of food colouring so the colour suffered a little, but not much. Used a vanilla cream cheese frosting and these disappeared from the adult table at my daughter's cupcake party!

Morning Glory Muffins I

These muffins are awesome! Healthy and filling and easy to grab as I walk out the door in the morning. I chose to grate the apple because it seemed easier, but otherwise followed the recipe perfectly and it worked out great.

Jelly Roll

This is an excellent recipe! I have tried so many recipes for what we call swiss rolls (same as a jelly roll), but they are usually eggy and bland. I overcooked mine a little, so no fault of the recipe. I used a combination of whipped cream and caramel as the filling to duplicate the swiss roll made by a local deli and it was bliss!

Blueberry Cornmeal Pancakes

These were very flat, tasteless pancakes. I subbed ordinary dairy milk for the soy milk and ended up adding 1/3 cup of sugar once I tasted the first one and that helped, but I won't be making these again . these just caught my attention as I thought they would be a little like a pancake version of Nigella's blueberry cornmeal muffins - they absolutely were not.

Black Magic Cake

This was a pretty good, rich chocolate cake. I used a good baking soda, but it could still be tasted, so I will scale that back a bit next time. I sprayed my pans like crazy and put a circle of baking paper on the bottom and had no trouble with sticking. I did not frost this cake as it was rich enough, just filled with some caramel fudge and dusted with icing sugar. My mom group loved this and didn't believe me that it wasn't super high in fat.

Zucchini and Corn Topped with Cheese

Fresh, Homemade Apple Juice

This is a great idea to use up the bits you would otherwise waste and I suspect that the apple variety used makes a huge difference, but I used the cores and peels from 4 pink lady apples in 4 cups of water and it tasted quite insipid after an hour of simmering and definitely didn't need any sugar. I ended up leaving the pot to sit overnight and it was like slightly diluted juice in the morning. I'll make this again, but with a higher ratio of peel to water for a really appple-ey flavour.

Sean's Falafel and Cucumber Sauce

The flavour of these falafel was spot on, but the texture was a bit off and they fell apart a bit during cooking. I think about half the breadcrumbs would be more correct and I will do this in future.

Indian Naan II

This is a pretty good recipe and it comes out almost like our favourite restaurant! We follow the recipe exactly, but brush with melted butter before and after grilling to make butter naan, just like the restaurant! My husband and I make these together - he rolls while I grill and brush.

Baked Cheese Olives

This recipe came out well once I took into account a number of reviews. It is really difficult to get the dough to come together without a food processer, but with the processor you just throw the ingredients in and whizz for about 20 seconds and you are good to go. I also only got the dough to cover 20 olives. When I tried to make it go further I had trouble with the dough sticking and not cracking. The baking was the other problem - they did not turn golden brown, just slightly crispy and this took about 25 minutes to achieve. Bearing all this in mind, I will be using this recipe again and will try covering other varieties of olive and maybe cocktail sausages.

Grandma's Lemon Meringue Pie

I had to make this recipe a few times to get the perfect result, but I finally have it. Unfortunately as printed it misses out how important it is to cover the topping with meringue immediately after pouring the topping into the pie crust and to spread it to the edges so that it sticks to the pie crust. The flavour is excellent though, but as with any recipe that calls for the juice of a lemon rather than a specific quantity, taste your filling to make sure it is to your taste.

Pecan Pie V

This is exactly the recipe I was looking for, so I really like this version of pecan pie. I tried to get clever the first time I made this and increase the quantity of nuts - big mistake, this recipe is perfect as is. The published recipe does not actually call for a pie crust though, which I assume is a misprint on the part of Allrecipes.

Best Brownies

This recipe really is the best! Soft and gooey and delicious. I didn't make the frosting because they really didn't need it. Because this recipe is so easy (melt the butter in a microwave safe mixing bowl in the microwave and no electric beaters or whisks required) I will make it often.

Bake Sale Lemon Bars

Unfortunately I took heed of all the reviews the first time I made this and used a smaller pan and ended up with an almost inedibly thick base and bars that were just too much. The second time I made these, I made them as written and they came out perfectly. My lemons were not very tart, so I doubled the lemon juice, on checking the batter.

Chocolate Orange Truffles

With amendment this recipe is quite good, but the quantities in this recipe are way off. I read all the reviews and proceeded with caution and with extra chocolate on hand. I ended up adding double the amount of chocolate the recipe calls for. By the time I was done adding little bits of chocolate after each time I let the mix cool, I was fed up, so I just rolled the truffles in cocoa, as is more traditional anyway. The end result is a really nice truffle, but beware of the quantities given.

Whipped Shortbread Cookies

This is a really rich and awesome cookie. The flavour is just like shortbread, but the texture is not - it is so much lighter. I made the cookies as written and rolled them into balls with oiled hands and baked (no cherries). Once they had cooled I half dipped them in chcolate. Yummy.
