Chicken with Chipotle

delicious! i used butter instead of margarine, but that's the only change i made. you can control the heat of this dish by taking out the seeds of the chipotles - that's what makes it spicy. i like making it pretty spicy, and i eat it with rice so i can drizzle some of the sauce over the rice.

i love these. i add some cayenne and cumin to the mix, and i normally use green peppers instead of red, because that's what i usually have on hand.

Cheesy Polenta

Basic Ham and Bean Soup

simple yet delicious. this is one of those recipes where the leftovers taste even better. i used chicken broth instead of water (although i had to add some water about halfway through because it got very thick), didn't use the ham hock, and left out the salt. i'll be making this often, i'm sure.

Dumplings

the only change i made was using melted butter instead of cutting the butter into the mix. these came out a little bland. i'm going to play around with some spices next time, a good base recipe though.

Irish Chicken and Dumplings

this is great comfort food! i used chicken thighs instead of breasts, cooked them until they were falling off the bone (about any hour), used chicken broth instead of water, omitted the salt (the broth has enough salt in it), used less carrots, potatoes, and peas than called for, omitted the celery, cut the onions and carrots into bite sized pieces. used my own recipe for the dumplings. next time, i will add some broth to make it a little more soupy, and i will play around with the spices.

Potato Bacon Chowder

mmmmm, i loved this. i used chicken broth instead of water, sauteed some garlic with the onion, omitted the celery and the salt, and added a little bit of cayenne pepper for a kick. good stuff!

Italian Breaded Pork Chops

one of my favorite comfort foods! i dredge the porkchop in flour with salt and pepper before the egg/breadcrumb step. i also use italian seasoning instead of the parsley. delicious!

Pistachio Bundt Cake

this was delicious! the crust was nice and chewy while the inside was very moist. i used yellow cake that had pudding in the mix, i think that added to the moistness. i also added a teaspoon of almond extract. i didn't make the glaze, the cake is just fine on its own!

Ziti Chicken and Broccoli

i really liked the taste here, but i didn't feel it was saucy enough for my preference. i seasoned the chicken with salt and pepper, sauteed the chicken in some olive oil, and added some italian seasoning to the sauce. i also left out the artichoke hearts. pretty good overall.

Connie's Zucchini "Crab" Cakes

these were really good. i thought they tasted more like a sweeter version of a potato pancake than a crab cake. i squeezed all the water out of the shredded zucchini, added the flour into the mix instead of dredging the the patties in flour, and i didn't have any old bay, so i added some garlic powder, salt, cayenne, italian seasonings, and parsley. my boyfriend and i really liked them like this.

Southwest-Style Egg Rolls

i used garlic salt and added some chili powder and a little cayenne pepper and some cubed chicken. instead of making these into eggrolls, i wrapped them in tortillas and put them in the oven at 350 for a few minutes, just to be a little more healthy. i also made a dipping sauce with some mashed avocado and equal amounts of ranch and sour cream. my boyfriend and i gobbled it all up.

Spaghetti Pizza I

this was an interesting idea, but nothing very exciting. just tasted like spaghetti with sauce, cheese, and pepperoni. i probably should have decreased the baking time (the spaghetti ended up sort of dry and really crispy at the edges) and added more sauce. it wasn't disgusting or anything, but i probably won't make it again.

Spinach Tomato Tortellini

this was delicious! a few changes i made - i used 3 cheese ravioli instead of tortellini, substituted sauteed mushrooms for the tomatoes, substituted half & half for cream, added more cheese, and added the spinach after the sauce had been cooked. next time, i'm going to try it with red pepper flakes instead of the basil, i like a little spice in my dishes. great dish!

Ranch Oyster Crackers

An excellent snack. Have been making this for years(am not sure where we first got the recipe) and everyone from kids to adults rave about them. I never had a complaint about them being too salty, oily or strong of taste. My only issue is that I want to eat them all myself!

Butternut Squash Soup

i only used 1/3rd of the original amount of cream cheese called for in this recipe, and i still found it to be very rich. it was very flavorful, but not exactly my style. i don't think i'll be making it again.
