Chocolate Chocolate Chip Cookies I

WOW! I am not done baking these and have already eaten THREE! They are divine. I was looking for a chocolate cookie to add Andes mint chips to and this was perfect. I almost subbed peppermint extract for the vanilla but changed my mind last minute and am glad I did-they are nice and chocolatey with plenty of mint from the chips. I followed other reviewer suggestions and baked for exactly 8 minutes and removed them from the pan immediately. No problems with sticking or anything. Can't vouch for how long they keep but I can assure you it will be a non-issue. They will be gone within 24 hours.

True-Blue Potato Salad

I have made this three times now and I have to say, everybody loves it! My husband is the world's pickiest eater and told me to put this recipe into the regular rotation. It is yummy warm or cold!

To Die For Blueberry Muffins

We made these today with blueberries and raspberries plucked from our patch. We followed the recipe exactly with the exception of mixing blueberries and raspberries. They were phenomenal. My kids don't really like baked goods and they each ate two! Thank you for a wonderful muffin recipe!

Hash Brown Egg Bake

This was really tasty! I made it when my mom friends came over for breakfast. All of the moms had seconds. I followed reviewer suggestions and added the extra egg and 1/4 cup milk, plus more cheese. Also, we are vegetarian so I added Morningstar Farms veggie sausage patties, cut into bite sized pieces. I will make this again!

Chuck's Favorite Mac and Cheese

This is so tasty! I admit that I omitted the bread crumbs, but it is only because I was in a giant hurry and the two minutes it would have taken to mix the melted butter and bread crumbs was more than I could spare. My husband loved this. My daughter said it was super cheesy. Yum!

Chinese Cabbage Salad I

This salad was really tasty! Don't let the simple ingredients fool you. I have a different opinion than other raters, for whatever it's worth. I thought the salad was tastier after sitting overnight. I did top it with fresh cashews the next day so it wasn't soggy, but I felt the flavors had a chance to blend overnight and it was really much yummier on day 2. I cut the sugar to 1T, cut the oil to 2T of sesame oil and 2T of olive oil. I also added a can of well drained mandarin oranges. An excellent salad that I will make again!

Pumpkin Pancakes

These were delicious! They are thick, so my first batch was gooey inside until I threw them back on the griddle. I used half and half instead of milk because I had some about to expire. They were yummy-almost a dessert! Would be good with whipped cream.

Easy Apple Crisp

This was absolutely delicious! The only change I made was to decrease the brown sugar to 1/2 cup. Next time I will omit sugar as it was still very sweet, though incredibly tasty. Great way to use up the mass quantity of apples I had!

Chocolate Banana Oatmeal Porridge

This was really tasty and a nice change from the oatmeal we normally eat. I omitted the brown sugar as my banana was pretty ripe, and it was perfect. Just a touch sweet. Nice way to sneak fruit into my kids.

Oatmeal Chocolate Chip Muffins

Yummy! I substituted 1/2 cup applesauce for the oil, added 1 tsp of vanilla and 1 tsp pumpkin pie spice. I omitted the nuts and added a few more chocolate chips. These were moist and delicious and the crust was sort of chewy and wonderful. Good muffin!

Spicy Bean Salsa

This salsa is awesome! The most time consuming part is shopping for the ingredients. I omitted the canned tomatoes and used two fresh ones instead. I also omitted the Italian dressing. I substituted a clove of pressed garlic for the powder and threw in a handful of chopped cilantro. A great recipe!

Clone of a Cinnabon

This was divine and I don't even like cinnamon! I didn't have bread flour but the texture was still wonderful. I used my KitchenAid stand mixer with dough hook and regular yeast-worked very well. Made twelve GIANT rolls. The dough seemed sticky after kneading but after it rose, it was perfect-rolled out with no problems and was super easy to work with. Will make these again!

Gourmet Caramel Apples

I love the idea of chocolate and caramel, but this was too heavy. The chocolate masked the apple and caramel flavors. Maybe just drizzle the chocolate on for a little flavor in every bite. They are easy to make and lovely to look at. We gave a bunch as gifts to happy recipients. Make sure to select a good, tart apple that can stand up to this much sugar. And I would skip the boiling water part next time as it softened the skins so much that they started peeling off. Maybe that was my fault for leaving them in the water for a good ten seconds. This is a great idea and delicious.
