Grain and Nut Whole Wheat Pancakes

I opted for 1 cup whole wheat flour, 1 cup cornmeal, and 1 cup multigrain breakfast cereal (with oats, barley, etc.) and used a mix of roughly even proportions of buttermilk, yogurt and milk for the dairy component. These were DELICIOUS, and had a nice crunch. I think the nuts are necessary, assuming you aren't allergic! Next time I'd like to try adding pumpkin seeds or sunflower seeds for a different crunchy taste.

Basic Crepes

Great recipe, with ONE exception: I initially followed the directions to whisk the flour/eggs then add the wet ingredients, but this left me with VERY lumpy unusable batter. Doing the reverse - mixing the eggs & wet stuff then sifting in the flour - worked way better.

Winter Vegetable Hash

Super, super tasty. I opted for no mushrooms (can't stand 'em), but otherwise followed the recipe to a T. I REALLY enjoyed this, particularly with some soy sauce to spice it up. It was also quite tasty with eggs - I scrambled them together with a little extra salt & pepper. Yum!

Lower Fat Banana Bread I

This is my favorite banana bread recipe! It's light and fluffy, and has lots of flavor for a lower fat banana bread. I like to add 1 tsp cinnamon, 1/2 tsp nutmeg and 1/2 tsp ground ginger, and occasionally a splash of vanilla extract. I also like to add any of the following: a cup of frozen berries (blueberries and raspberries are best), 1/2 cup walnuts and/or pecans, 1/2 cup finely chopped candied ginger, 1/2 cup semisweet chocolate chips. For an extra lush version, top it with fresh lemon juice and dust it with sugar. Goes great for breakfast, toasted, and smothered in fresh applesauce.
