Toasted Pumpkin Seeds

YUMMO. My hubbie loves sunflower seeds and he LOVED these. I will definitely make these anytime that we have a pumpkin to carve.

Vanilla Ice Cream

The flavor of this ice cream was really delicate and sweet. However, I had some problems with the consistency. Yes it's very smooth and creamy but it left a film in my mouth that was a turn-off.

My family enjoyed this recipe. I had to puree the sauce a second time after it cooked down a bit. It was really grainy. I use 2% milk so maybe that's why... Next time I will definitely use breasts because our family prefers white meat to dark. I think this would be really yummy served along side grilled chicken.

Taco Soup III

This is a standby favorite at our house. Like many others I substituted frozen corn for the hominy. I also add 2 cups of chicken broth at the end and simmer on high until the sauce is reduced. Very rich flavors for such an easy soup.

Bubba's Jambalaya

My family and I love this recipe. I follow it exactly except to omit the ham. The bacon is a really nice treat and sets this jambalaya apart from other recipes.

Chicken Stir-Fry

This is a great "base" recipe. I used wafer thin pork tenderloin strips instead of chicken and a bag of frozen stir fry vegetables plus a can of bean sprouts in place of the fresh veggies. I also used fresh garlic and ginger and substituted a tablespoon of sesame oil for one of the tablespoons of veg. oil. I didn't need more than 1/2 cup of the bouillon. Overall - I will definitely be coming back to these flavors.

Fish Tacos

I really loved this recipe but unfortunately the rest of my family didn't. If you have very picky eaters I wouldn't recommend this recipe and especially the sauce. Saying all of that, the sauce was delicious and I loved the capers. I only wish my family had a more sophisticated pallete.

Chicken Piccata II

My family really loved this recipe, but I had to alter it a little bit. I used olive oil along with the butter to cook the chicken. I didn't have enough flour and substituted with some finely crushed saltines. YUM!! I also added white wine to the sauce along with a cornstarch slurry. The cornstarch is essential in my opinion. Overall, a great recipe.

Banana Muffins II

A family favorite from now on! In the past 3 months I've made these delicious moist muffins atleast 8 times. Don't be tempted to alter the recipe, these are perfect just the way they are.

Cheddar Baked Chicken

My entire family, including 3 VERY picky children, loved this recipe. I only added one thing - and that was a sauce. In my house nothing is complete without a sauce. It was a pretty simple white wine/chicken broth/butter sauce that complimented the chicken really well. We also used plain bread crumbs with a generous tablespoon of italian seasoning. Thanks Judy for the great recipe.
