Buffalo Chicken Dip

The only thing I did differently was use a rotissiere chicken instead of canned. If was delicious!

Curried Coconut Chicken

This was mmmmmm good! My friend brought us some curry paste from Bangkok and we wanted to use it. So the only thing we did differently was use the paste instead of curry powder. Even my two year old gobbled it up!!! We served it over rice and couldn't wait to eat left overs!

BBQ Pork for Sandwiches

We give this a four only because we added some things...but this was a great base to start. We added the beef broth but only had a 10 ounce can, so we added a couple shakes of liquid smoke and about half a bottle of hickory smoke A-1. Put it in the crock pot for fours hours and followed the instructions the rest of the way. It was AMAZING!!!! I would give the meal that came out 5 stars, but because we didn't stick to the recipe exact, I gave it 4...hope that makes sense.

Sugar Coated Pecans

I doubted my husband when he wanted to get all fancy and make these. I admit I was wrong. These are awesome! We put them in a spinach salad with strawberries, mozerella cheese and a poppy seed dressing.

Chicken broccoli casserole

Is it cheating to give your own recipe 5 stars? But somehow the directions got messed up! Let me clear it up...you do not cook the chicken in the microwave, you boil it until it's done. This has become a family favorite. I always have the ingredients on hand and it's also a good one to make ahead and freeze. My two year old eats it without thinking twice about the broccoli.

Lemon Cream Pasta with Chicken

I followed the suggestion of some others and cubed my chicken and cooked it in a pan instead of baking. It didn't take nearly as long this way. I also steamed broccoli and added it once everything was done. It was excellent!!! I would add mushrooms but my husband hates them.

Shepherd's Pie

This was great! I did (of course) change a few things. I used instant mashed potatoes as some suggested to save time. I put a layer of potatoes on the bottom as well, added more vegetables, brown the meat with some chopped onions, added a little bit more cream of celery (but not quite two cans) just to make it more creamy. My two year old nephew ate it thinking it was "mashed potatoes" and loved it. He does not eat vegetables at all and he gobbled this meal up. When my sister came to pick him up he said, "I love Aunt Katie's mashed potatoes! They were yummy!"

Lime Chicken Soft Tacos

These were so good! We did substitute cilantro instead of oregano. We also put black beans and rice on our tacos with that melted cheese you would get in a Mexican restaurant. They were so good my husband requested them for his birthday dinner and he is not a huge Mexican food eater!

Grilled Orange Vinaigrette Chicken Salad

This was great. I had to change a few things just because I didn't have everything I needed. I did not have white wine vinegar on hand so I used a little bit of white vinegar with a little white cooking wine. I also did not gave the garlic and herb seasoning so I used some garlic salt and Italian seasoning. We couldn't grill because it was raining like mad outside so I cooked them in a pan putting half of the sauce mixture in and when I flipped the chicken I poured the rest of the mixture in. It turned out great! We served it with a side of pasta. I will be doing this again soon!
