Zucchini Soup II

This soup is delicious! I would have given it five stars, but there is no seasoning in the recipe and without it, it is bland. Most cooks know to taste and season accordingly, but it's helpful to add seasoning amounts for those who are new to cooking. I added 1 tsp onion salt, 1/2 tsp pepper and 1/2 tsp garlic powder, and it was perfect. I've also substituted plain, fat free yogurt for the sour cream (when I'm out of it) and it is awesome! Highly recommend this recipe.

Cinnamon-Raisin Granola

I've been making this granola for over a year now and just love this recipe! It doesn't make super big clumps but I don't mind -- I sprinkle it over yogurt and eat it for breakfast or an afternoon snack. The base recipe gets 5 stars -- and it is also very customizable. I've added almonds, peanuts, dried cranberries, and also subbed 2 tbsp of peanut butter for 2 tbsp of the oil, and it always turns out delicious!

Perfumed Coconut Cake

I've been using this recipe for 3 years now and it is AMAZING. I don't change anything, other than omitting the pecans. My husband loves coconut, so I made this for his birthday. This cake is moist and SO full of flavor! My kids loved it so much that now they ask for this cake as well. It just doesn't get any better than this!

Grandma's Iron Skillet Apple Pie

I made this pie following the recipe exactly. It was really amazing, and I actually already have an apple pie recipe that I love. This is now going in my apple pie rotation because it is truly delicious! A few notes--it *is* sweet, but my husband and I like it this way. Usually I up the amount of cinnamon (I like my pies to be really spicy) but I think the 2 tsp of cinnamon is just right for this pie. We did not have any trouble with the pie sticking to the bottom of our cast iron skillet.

Cheddar Spirals

I have this in the crockpot right now and it is AMAZING. I made this for my daughter, who prefers spiral pasta and creamier mac & cheese versus the baked kind. I just had her taste it to see if it needed salt, and had to finally slap her away because she was eating all of it! ;-) This recipe is a keeper for us -- and very easy to make, too.

Sloppy Joe Sandwiches

Chicken Pot Pie II

All-Day Apple Butter

My husband asked me to find an apple butter recipe for him, and I went with this one. He is thrilled with this recipe and uses it every time. The apple butter comes out just the right consistency, with a good balance of apple and spice flavor. We love it!

Hot Caramel Apples

I've made baked apples before, but I really love the slow cooker twist in this recipe! This makes a really tasty dessert that is not heavy or overly filling. Next time I make these, I'm going to leave more room inside the apple after the core is removed -- it was a little difficult to fit all the ingredients inside each apple. I left the butter resting on top, but you could also melt the butter, I suppose!

Autumn Pot Roast

I've made lots of pot roasts in my time, but this recipe is the BEST I've ever used. Absolutely delicious! I used balsamic vinegar instead of cider vinegar, because that was all I had on hand. I also baked the pot roast in a large covered pot in the oven. Those were the only changes I made to the recipe. The meat and vegetables were moist and flavorful, the gravy is just fantastic -- this recipe is a real keeper!

Cranberry Sauce Extraordinaire

I've made this recipe for 2 years now, and my husband is already talking about it, with Thanksgiving around the corner! It was a huge hit with everyone, even non-cranberry sauce eaters (like myself). It is now served at Christmas dinner as well!
