Shrimp Scampi Bake

YUMMMY! Easy to make - great flavors, I used frozen shrimp & did add 1/2 cup white wine, but mixed in after it had baked a few minutes b/c initially I forgot. It was great!

Mom's Zucchini Bread

Oh man - this is the best ever!! I did use 1/2 cup applesauce like other reviewers mentioned to make it a little healthier & I use chopped pecans because I have them in the freezer, but we LOVE this bread (and with 2 loaves - it's great to take one to the office or give to my in-laws!!)

Flatlander Chili

YUM YUM YUM! I wondered about the 1/4 cup of chili powder, but the flavor of this mixture is wonderful! I did make changes for personal taste & texture, but for me, this was an excellent base to work from. Like others, I subbed out the tomato juice for 2 of the large cans of tomato sauce (29oz) and then the tomato sauce for 1 large can of diced tomatoes. I don't care for kidney beans so I used 1 drained can of pinto beans & 1 can of chili beans, partially drained. Chopped jalepeno pepper was a good addition. I served over macaroni noodles with some cheese & sour cream & it was SO GOOD!! My husband bragged for days!!

Honey Cornbread

Oh So Tender Brisket

Wonderful! A week later my husband is still bragging what a great cook I am and wanting this instead of turkey for thanksgiving! I did use 1/2 cup of beef broth & was happy w/ the a jus that was left in the bag/pan. Great for a dinner party when you want to enjoy a cocktail with your friends before the meal!!

Ultimate Twice Baked Potatoes

Awesome!! I would cook the potatoes at 400 degrees for 1 hour next time because they weren't done enough at 350. I made them in the morning for a dinner party & kept the filling in the fridge. 15 minutes before everyone came I stuffed & put them in the oven. They cooked 30 minutes or so, but were just fine. I put bacon on half of them, just in case people don't like that flavor. I did mix in all the green onions & only used 1/4 cup of cheese on top. Every last one was eaten & my husband wonders when we get to have them again!
