Baked Ziti III

I made this for a family gathering… and my sisters refused to leave without left-overs! I love the addition of fresh basil (different from my old Baked Ziti recipe.) My only adjustment as to use ½ ground turkey and ½ Italian turkey sausage for the meat. Thanks, Susan!

Stuffed Shells IV

I was so excited to try this recipe, but all I had in my pantry was penne shaped pasta. So, I used all the ingredients and made a baked pasta casserole which turned out great! Great flavors and very tasty. I can’t wait to try it again with shell pasta! Thanks, Barbara!

I borrowed another recipe for the crust (I prefer whole wheat) but made the sauce as directed. It was GREAT! A prefect mix of spicy and savory… overall super tasty sauce. This is a definite keeper. Thanks, Mike!

Caribbean-Spiced Roast Chicken

The guest I made this for is on a restricted diet, so I left out the rum and brown sugar. The chicken tasted AMAZING… so moist and flavorful! I can only imagine how good it would taste when made as directed. I can’t wait to make it again… this time with the rum and brown sugar! And, I’d like to try the spice mixture on other ingredients… maybe over sweet potatoes!?! Thanks for a great recipe!

Rosemary Roasted Pork Tenderloin

Sauerkraut Onion Bread

I prefer (and enjoy) making bread the old-school way, so I didn’t use a bread maker for this recipe. It was delicious! I used a little bit more sauerkraut and onion than called for (I wanted to use up what I had) and I found the flavors quite complementing. This bread was perfect for sopping up the meatball stew I served it with! Thanks, Jeff!

Garlicky Beet Delight

I roasted the beets at 400 degrees for about 45 mins, then doubled the amount of garlic and added approx 1/2 c sliced red onion. It was delicious! Thanks for a great recipe!

Rosemary Mashed Potatoes and Yams

I wouldn’t have thought of pairing the different types of potatoes… but I’m sure glad I tried it. This dish was excellent! My only adjustment was to use cream versus milk and fresh rosemary versus dried. Yum! Thanks, Ibby!

Fennel and Orange Salad

A good change from the usual green salad! I did make a few changes to the recipe: I added sliced red onion, sliced toasted almonds (instead of poppy seeds) and served it over baby spinach (instead of arugula.) I didn’t get as much fennel flavor as I had hoped… but, the salad was still quite tasty. I think I’ll make it again, with a few additional changes. Thanks, Barrett!

Chicken Meatball Soup

Perfect for on a cold day! I omitted the parsnips (didn’t have any) and added small pasta shells and fresh thyme sprigs. The meatballs were a nice change from the usual chicken soup. I’ll definitely make it again, though I’ll tweak the meatballs a bit for a little more flavor. Thanks, Betty!

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

While I really enjoyed this recipe, I think I’ll tweak it a bit the next time I make it. I opted for the oven option… which might have led to the sweet potatoes not getting as soft as I’d like. All in all, a great idea. Thanks, RCKim!
