Chicken Meatball Soup

Perfect for on a cold day! I omitted the parsnips (didn’t have any) and added small pasta shells and fresh thyme sprigs. The meatballs were a nice change from the usual chicken soup. I’ll definitely make it again, though I’ll tweak the meatballs a bit for a little more flavor. Thanks, Betty!

Rosemary Roasted Pork Tenderloin

This dish turned out great! The pork was very tender and flavorful. I opted to make a sauce/gravy out of the reserved marinade, instead of using it for basting. Delicious! Thanks, Carolyn!

Sauerkraut Onion Bread

I prefer (and enjoy) making bread the old-school way, so I didn’t use a bread maker for this recipe. It was delicious! I used a little bit more sauerkraut and onion than called for (I wanted to use up what I had) and I found the flavors quite complementing. This bread was perfect for sopping up the meatball stew I served it with! Thanks, Jeff!

Buttermilk Corn Bread

Garlicky Beet Delight

I roasted the beets at 400 degrees for about 45 mins, then doubled the amount of garlic and added approx 1/2 c sliced red onion. It was delicious! Thanks for a great recipe!

Fennel and Orange Salad

A good change from the usual green salad! I did make a few changes to the recipe: I added sliced red onion, sliced toasted almonds (instead of poppy seeds) and served it over baby spinach (instead of arugula.) I didn’t get as much fennel flavor as I had hoped… but, the salad was still quite tasty. I think I’ll make it again, with a few additional changes. Thanks, Barrett!

Shaker Herb 'N' Meatball Soup

I think this is a good starter recipe, but I will definitely make some changes the next time I make it. I really loved all the veggies and seasonings, but found the meatballs to be a little bland. I also adjusted the cooking time/order. I was concerned the veggies would be too soft to cook them for as long as directed, so I combined the broth, tomatoes and seasonings… then added the meatballs… let that cook for approx 45 mins… then added the veggies for another half hour. I borrowed another recipe for the crust (I prefer whole wheat) but made the sauce as directed. It was GREAT! A prefect mix of spicy and savory… overall super tasty sauce. This is a definite keeper. Thanks, Mike!

German Lentil Soup

Quite tasty, though I made a few adjustments. I opted for the stovetop method due to time… and added 2 cups shredded cabbage, 1 c sliced crimini mushrooms, 4 cloves minced garlic, an additional 2c chicken stock and 2 t smoked paprika. It turned out great! Thanks, Claire!

Stuffed Shells IV

Rosemary Mashed Potatoes and Yams

I wouldn’t have thought of pairing the different types of potatoes… but I’m sure glad I tried it. This dish was excellent! My only adjustment was to use cream versus milk and fresh rosemary versus dried. Yum! Thanks, Ibby!

Almond Sole Fillets

Based on the previous reviewers, I also baked this in the oven. I found the flavors quite complementary, but overall I didn’t really care for the sole. (It was my first time eating this fish.) I think I might try it again using another kind of fish. Thanks for the recipe!

Caribbean-Spiced Roast Chicken

The guest I made this for is on a restricted diet, so I left out the rum and brown sugar. The chicken tasted AMAZING… so moist and flavorful! I can only imagine how good it would taste when made as directed. I can’t wait to make it again… this time with the rum and brown sugar! And, I’d like to try the spice mixture on other ingredients… maybe over sweet potatoes!?! Thanks for a great recipe!

Maple-Glazed Pork Chops

These pork chops were a big hit with my family. I was concerned about it being too sweet, so I only used 1/3 cup of brown sugar. (Versus 2/3 c.) I didn’t get too much of a maple flavor, so I think next time I’ll use a little more maple syrup. Overall, the pork chops tasted great and were very tender. Thanks, Cheryl!

Baked Ziti III

I made this for a family gathering… and my sisters refused to leave without left-overs! I love the addition of fresh basil (different from my old Baked Ziti recipe.) My only adjustment as to use ½ ground turkey and ½ Italian turkey sausage for the meat. Thanks, Susan!
