Rich and Simple French Onion Soup

I love this recipe! It was so easy and so tasty! The only ways I modified this were to use Riesling wine instead of the dry sherry, and I used one slice each of provolone and light swiss, without the parmesan. There were two servings left, which I left in the individual serving bowls... they heated up great as leftovers. I will definitely be making this one again!:)

Cheesy Potato and Corn Chowder

This was my first attempt at any kind of chowder... It turned out great and made so much more than I thought it would. I made it for my boyfriend, but my best friend and her boyfriend came over last minute and there was plenty to go around; I even had leftovers. I used creamed corn as some of the other reviewers suggested, and I also used regular processed cheese instead of the spicy kind. To add a little kick, I did put in cajun spices, and it turned out great - not too spicy, but definitely not bland at all! I'll be making this again this season... it's a great "chilly day" soup:)

Love Soup Mix in a Jar

This is a great, easy recipe. I gave it to family and friends for the holidays. I made it first to try and it was great... it made a lot!! I didn't add meat. I also left out the macaroni, and only added the tri-color pasta at the end. It was easy and fun to put the jars together (I put the pasta in colored saran-wrap), and so far, everyone has said they loved it! My brother said he added in a jar of canned tomatoes, which he said was great. I have a couple left still from the holidays, which I plan to use myself. Great recipe :)

Slow-Cooked Corn Chowder

This recipe was great... it was very tasty, and made enough for me to take into work for lunch for a couple days too. It was also so easy to just throw all the ingredients in the slow-cooker and not worry about it. I did make several changes.. I used cream of potato instead of cream of mushroom (didn't have the cream of mushroom at home); less frozen corn (one cup), more hash browns (two cups); I only put in half of an onion, only because I'm not a huge fan of onions; no ham; lastly, I added chili powder because I wanted to add a little kick. It turned out great! Thanks for the recipe!

Potato Chips

These are awesome! Made them for myself and loved them so much I ended up making them for friends and family too... big hit! I used a really sharp knife to cut the potatoes, which wasn't a big deal because I liked that the chips were all a different thickness. I didn't use any oil, just used non-stick cooking spray on the plate, and then over the slices before microwaving. Cook time was about ten minutes in both microwaves I used. Only used a tiny amount of salt... you don't need much! This is one of those (healthy!) snacks I'll make again and again! :)

Broccoli Cheese Soup

This is a great recipe! I made it for my family, in particular my brother visiting from out of town. He's not the biggest broccoli cheese soup fan.. I wanted to change his mind! I made several changes, but basically stuck to the recipe. I used fresh broccoli, and more than called for. Instead of chicken broth I used veggie broth. I couldn't find the "light" version of the processed cheese, so I only used about half of the block. Also, as some other reviewers suggested, I used 1/2 and 1/2, but only one cup. I also didn't add the cornstarch. I topped it with shredded sharp cheddar cheese (my fave!). With my modifications it wasn't as thick and creamy as the kind you might find in a restaurant, but it wasn't lacking in flavor whatsoever, and everyone, big bro included, really enjoyed it! :)

Party Pinwheels

These are so tasty! I made them twice to make sure I made them right for a party. The first time I didn't think I used enough pepper or celery, so the second time I added in much more (maybe close to 1 - 1 & 1/2 cups each?) which gave a much better crunch. I also added in more green onion the second time - three "stalks" instead of two. I left out the olives due to personal preferences of the guests. I also used the fiesta ranch mix as another reviewer suggested... not sure how it would compare to original ranch, but I loved it! I used low fat cream cheese both times. Also, I mixed everything except the shredded cheese together before spreading it. Just make sure the cream cheese is soft to make it easier to spread. Wonderful recipe, I'll definitely be making this for other events!

Basil Shrimp

I myself do not eat shrimp, but I made this recipe on Mother's Day, and both my parents said it was great. I liked it because it was easy to prepare. To keep the juices on them better, I "linked" the shrimp, kind of like they were facing each other, which made it easier to brush the marinade on them while grilling too. I also used two skewers through each to make them easier to flip on the grill. I'm guessing I'll be getting requests for this one again!

Vegetable Dip

This dip is awesome! I make this all the time to snack on with fresh veggies while I'm cooking dinner. I've left out the dill every time I've made it, but that's only because the first time I made it I didn't have any dill (one of these days I'll buy some). I also usually add in more minced onion, only cause I love it. Great to bring to any get-together!!

Zesty Slow Cooker Chicken Barbecue

Love it!! I have made this so many times, and every time I do it gets rave reviews. I always add in an onion and about four garlic cloves. Another nice addition is red pepper cut into medium-sized pieces. Just don't forget the brown sugar! This is definitely one of my favorites :)

Texas Black Bean Soup

This recipe is great! I've made it many times, and each time it's a little different. I like to substitute Rotel for one of the small cans of green chiles. Also, instead of canned corn I use frozen corn(cheaper and better for you). Adding a huge dollop of sour cream and some shredded sharp cheddar just before eating makes this perfect. This was my dad's favorite on those chilly ice fishing days :)
