Black-Eyed Pea Soup

I realized after making this soup that I need to purchase a bigger dutch oven! I used what I had or only ingredients that I liked. Instead of regular onion I used a red one. For the black eyed peas I used homestyle with bacon flavor 2 cans and regular plain ones for 1 can. I used better then bouillon beef and bc I did not have molasses I used light brown sugar instead. I also don't like a lot of tomatoes so I only used 1 can of diced tomatoes with green chile peppers. I used both hamburger and mild sausage. This soup is hearty and was very delicious. I am going to have to freeze some for later but I would definitely make it again.

Ham and Bean Soup II

I've made this soup a couple of times and normally when I do make it it's in the crock pot. I use presoaked navy beans then rinse them and place in the pot with enough water to cover about 1" above. I cut up fresh carrots and add. I use V-8 juice to taste and add Better then Bouillon Ham base. I also have found that a ham hock with meat on it tastes better then plan sliced up ham. When it's about 2 hours from done you can shred meat from bone and placing meat back into soup and leave the bone out. I add sliced up potatoes half way through cook time. Best thing about this soup is everything is to taste no need for being perfect,

Baked Ziti III

I customized this recipe to my families taste. I left out the ground meat, onion and basil bc I either didn't have it or don't like it. I used the sour cream to coat the ziti noodles after I cooked them and added a layer of cottage cheese on top of the noodles instead of Ricotta (stole from a dif recipe) with a little parmesan cheese. I used Paul Newmans Sockarooni Sauce which gave great flavor and poured over top the noodles and cottage cheese mix. Added shredded Mozzarella cheese and baked it in the oven. Tasted great and even better the second day. We revived the leftovers by adding more cheese on top of cold noodles and placed back in the oven not the microwave to heat up. My daughter asked me to make this again.

Slow Cooker Chicken and Dumplings

I took other reviewer suggestions and placed 3 semi frozen chicken breasts into the crockpot whole. I added 1 can cream of chicken and 1 can cream of mushroom soup. Added butter and 1 can of chicken broth and also about half a can of water. cooked on med for about 5 hrs and then shredded chicken. Cut up 5 big biscuits and cut in quarters and turned on high for 1.5 hrs pressing them into the soup to make sure they cooked. I also added some frozen veggies. We liked this recipe but since it was only 2 of us we had a lot of leftovers. I personally liked it better the first day then as a leftover.....I would make this recipe again.
