Homemade Buttercrunch Candy

This was easy to make and it tastes great. I used semi-sweet chips because it is what I have and it turned out very tasty. We might think I've wrecked the recipe if I go to milk chocolate next time. I've made this again to have on the munchie table for Christmas dinner so it has to be good. Thanks for an easy recipe!

Southern-Style Meat Sauce

I cut this recipe in half since I didn't need the full recipe. Be warned, this is very hot. I only used half a tablespoon of pepper flakes in the half recipe and I have now added diced tomatoes and 2 more tablespoons of sugar to try to counteract the heat. My three year old will never eat this with it this hot. I also added a green bell pepper, just because I like it in my sauce. It was a very tight mixture so I added water to simmer or I would have been frying it soon even on low. The taste is ok, but I'm beginning to feel like I've altered it enough to call it my own. I've got to go brew tea to put out the fire in my mouth!

Roast Sticky Chicken-Rotisserie Style

I'm not a fan of baked chicken, so I thought I'd try this and see if I liked it. I did. I actually used the rotissery in my toaster oven, and I got an excellent chicken out of it. Two, really. I roasted two of the smallest chickens, not actually classified as Cornish game hens, that I could find. I didn't plan far enough ahead to refrigerate, just stuck them on the spit with one small whole onion for each chicken and let them twist in the heat. I did cut the cayenne in half. This will join the rotation at my house. Thanks for sharing, Sue!

Erica's Delicious Slow Cooker Beef Roast

I tried this for a change from the regular recipe that I use. It was ok, if a bit bland. We ate it, so it wasn't a failure, but I don't think I'll use this recipe again. I'm always looking for oohs and aahs, this needs majors adjustments for that to happen.

Killer Cheesecake

I have come to the conclusion that the best recipes are also sometimes the simplest. This is an excellent recipe. Easy to make and tastes wonderful. I did find that the cake needed double the baking time and I put a large pan of hot water on the bottom rack to humidify the oven. Make sure to bake it in the middle of the oven to slow browning. The other reviews were right, the crust had too much butter for me. But this was so good that my 3 year old took off with mine, ate every bite and she's not much for any kind of cake. Thanks for sharing a tasty recipe!

Kaese Spaetzle

Well, this was ok. I probably wrecked it on the first try as I only had cheddar cheese. But the spaetzle was good, just be sure if you use a collander, that you use one with large holes otherwise trying to force the dough thru is a pain. It was filling,that's for sure. But for a middle of summer lunch experiment, it didn't crash and burn. The 3 year old ate it but the 6 year old didn't. I'm not sure I'll make it again though.

Roast Beef and Cheese Roll Ups

This was too salty, but I can't really blame the recipe for that. I think I will try this again with my own roast beef, an eye of round roast made with onions, salt, pepper, thyme, bay leaf, a little brown sugar, and beef broth, cooled and sliced thin would make small rolls . The cheese was excellent and I think it could be used in other places, like manicotti. I'll try this one again.

Filipino Lumpia

This was delicious, I confess to a small modification. I added about double the cabbage and then I added about 2 tbsps of sugar to the filling. It didn't sweeten it so much as smooth out the flavors. Lumpia wrappers are time consuming to separate, but very tasty. I have made this several times and keep getting happier with my efforts. I substituted chicken for the pork and wonton wrappers for the lumpia wrappers once and they were still good. My 3 year old must have an asbestos mouth, because she grabs them up as fast as she can get her hands on them and they disappear. This has already become a favorite around here. Thanks Christina!

Sizzling Chicken Skewers

I must say, when I mixed up this marinade, I had serious doubts. It was very chunky. I was afaid that I was consigning my chicken to the trash. I was wrong. It was excellent. The only request I have gotten, is that next time I should make the strips thinner. My 5 year old came back for more, not that she's picky, but she saw the marinade, too. This one will be on the menu again!

Exquisite Pizza Sauce

My teenager loved it! I didn't have anchovies to put in it, but it was excellent. I skipped the honey since I don't like honey anywhere but on biscuits. I did add a couple of teaspoons of sugar to round out the tomato paste. I would say this is a winner. Quite spicy!

Lemon Icebox Pie III

Whew! This one has been a big hit. Even my 5 year old likes it, she's not much of a sweet eater. I don't know how that happened. I did increase it to the juice of 3 lemons for our tastes. This one will be on the menu alot!

Italian Meatball Sandwich Casserole

I have made this several times with varying degrees of success. However, I think I've tweaked it to our liking by being skimpy with the sauce and skipping the extra water and garlic. I've used all kinds of bread, French works well, too and heat and serve bread sticks slice into bite sized pieces nicely. The meatballs are good, and I'm not always crazy about meatballs. But the cream cheese mixture is what makes this so yummy! This is an excellent recipe!

Ranch Dressing II

I have bought my last bottle of Ranch dressing! Excellent! It was very thick, so I thinned it with milk. I skipped the dill, I didn't have any, and I used fresh chives. It is excellent on baked potatoes.

Peppermint Meringue Cookies

This is an excellent cookie. It was a little tricky to bake, though. They will brown if the oven is too hot. A plain cookie is easy to make too. Substitute 1/2 teaspoon vanilla for all of the crushed peppermint. I piped them with a large star tip and they make pretty cookies.
