Figs Oozing with Goat Cheese

What I made was more of an amalgamation of the reviews than the original recipe, so I don't know how fair my five stars is. I used prosciutto instead of grape leaves, dried figs instead of fresh, and did mine under the broiler instead of on the grill. But the flavor was amazing, and we were both REALLY happy with the results.

Pork Chop and Feta Skillet

I didn't change a thing with this recipe (which is unusual for me!) and it was fantastic! I served it with a recipe for Garlic Broccoli Spears that I found on this site, and the fiancee RAVED about it. I'll be making this one again soon!

Cha Cha's White Chicken Chili

This was great! I doubled the chiles and halved the cayenne, and it was spicy enough to make us sniffle, but still had great flavor from the peppers. Will definitely make this again!

Chicken Wing Dip

This dip is fantastic! I made it for a pot-luck BBQ we had at work, and by the end of the day I had to print up 5 copies of the recipe for my coworkers. Like a lot of reviewers, I substituted Bleu Cheese dressing for the Ranch, plus I used the "Buffalo Wing" flavor of Frank's Red Hot. One tip - make sure your cream cheese is room temp, and use a hand mixer to combine it and the hot sauce. It was a little diffcult to get everything to blend together by just stirring. Hand mixer solved that right away. My fiance suggested the next time I make this, I double or even triple the amount of chicken, shred it instead of chunks, and use it to make hot wing sandwiches. I can't wait to try that!

Slow-Cooker Chicken Tortilla Soup

This soup was absolutely delicious. I garnished with sour cream, shredded cheddar, and avocado, along with the tortilla strips, and it was so filling and perfect on a cold, rainy day. I'll be making this one again, that is, after we finish the bucket of leftovers!

Asparagus with Gorgonzola and Roasted Walnuts

WOW. So simple, but SO perfect. I toasted the walnuts in a dry skillet on the stove instead of in the oven so I could keep a closer eye on them, but other than that, made no changes. What an awesome side dish.

Veal Mozzarella

This was delicious. Made a couple of changes - veal blade chops instead of cutlets, thick slices of mozzarella instead of shreds, added sliced baby bella mushrooms - and served with some artichokes to dip in the extra butter sauce. So very unhealthy, and not so easy on the budget, but once or twice a year? Oh yeah.

Cheesy Polenta

Wow. This was my first time making polenta, and it was so easy and so delicious that I cannot wait to make it again. The only changes that I made were to use 1% milk instead of whole, because it's what we had, and to add way more cheese, because I'm from Wisconsin and there is no such thing as too much cheese. I used a mix of Asiago, sharp cheddar and mild cheddar, and it was perfect. 10 star recipe!

Mushy Peas I

This was perfect! I've never been a huge fan of peas, don't mind them, but they're not one of my favorites. My fiancee, on the other hand, LOVES peas, so I try to come up with different ways to cook them so that we both like them, and I've finally done it with this recipe. From now on, this is going to be my default peas recipe - super quick, delicious, and easy clean up since I used my immersion blender and "mushed" them in the same pan that I cooked them in. Wonderful side dish - I served this with roast beef and Yorkshire pudding for a big, complete meal.

Indian Fish Curry

Wow! Amazing flavor and much less work that it initially looks like. I cut the cayenne down to 1 tsp and it was still fiery enough to cause the sniffles. I can't believe how rich and complex the flavor was. I'm saving this one, for sure!

Easy Paella
