Monterey Spaghetti

This was....okay. Not great, certainly not bad. I added a little cooked, crumbled bacon at the end with the cheese and onions, which helped give it a bit more flavor. I'd probably make it again, because it was easy and the fiancee liked it, but it wasn't as good as it sounded when I read the recipe.

Slow-Cooker Chicken Tortilla Soup

This soup was absolutely delicious. I garnished with sour cream, shredded cheddar, and avocado, along with the tortilla strips, and it was so filling and perfect on a cold, rainy day. I'll be making this one again, that is, after we finish the bucket of leftovers!

Chicken Wing Dip

This dip is fantastic! I made it for a pot-luck BBQ we had at work, and by the end of the day I had to print up 5 copies of the recipe for my coworkers. Like a lot of reviewers, I substituted Bleu Cheese dressing for the Ranch, plus I used the "Buffalo Wing" flavor of Frank's Red Hot. One tip - make sure your cream cheese is room temp, and use a hand mixer to combine it and the hot sauce. It was a little diffcult to get everything to blend together by just stirring. Hand mixer solved that right away. My fiance suggested the next time I make this, I double or even triple the amount of chicken, shred it instead of chunks, and use it to make hot wing sandwiches. I can't wait to try that!

Slow Cooker Roast Beef

This was my first attempt at a beef roast and it couldn't have been easier. I've always been afraid of making a roast because my mother used to dry them out, but this was moist and tender. My fiancee came home and saw the roast, the gravy, and the mashed potatoes I'd made and said "Wow....real dinner!" I guess from the original meat and potatoes man, it's the highest compliment he can give.

Roasted Garlic Peppercorn Sauce

I thought this was kind of bland - I don't know how, since it had plenty of garlic and peppercorns in it, and I added a decent amount of parmesean cheese too. I might make it again, but it's not going to go into heavy rotation.

Slow Cooker Chicken and Dumplings

This needed a lot of tweaking. I added a LOT of vegetables (carrots, celery, potatoes, froz. peas and froz. corn) and then, not realizing I'd almost tripled the contents of my slow cooker, I still "added water to cover." When I came home, I had a full pot....of soup. I'd recommend if you're adding veggies to this, to either add far less than you think you should, or add more Cream of Chicken soup so it doesn't wind up watery. On the plus side, I was pretty sure the using-canned-biscuits-as-dumplings thing was going to be a disaster, but it actually was pretty amazing. I don't think I'll make this recipe again, since I'm sure there are better ones for Chicken and Dumplings out there. But I'll hang on to the biscuit idea. Just my $.02.

Brie Cranberry and Chicken Pizza

This was really easy to make and pretty tasty. The flavor of the brie kind of got lost, I'd probably add more and reduce the amount of cranberry sauce next time, just so it was more noticable.

Cheesy Brat Stew for the Slow Cooker

This didn't quite turn out the way I had envisioned it in my head when I printed out the recipe. I thought it was going to be thick and cheesy, and it actually turned out kind of thin, and the cheese separated into little globs instead of just melting into the stew. I think I'll make it again, but I'll follow the suggestions in other reviews and use Velveeta instead of cheddar. Other than the fact that I had assumed it would look different, this one was pretty good. A little playing and tweaking and it could become "a regular."

Easy and Delicious Chicken

This is a very well-named dish. It was super easy and super tasty. I didn't have and rice or pasta on hand (day before grocery day) but it was fine on its own. A little too saucy to be served alone though, so I'd recommend rice or maybe egg noodles. One warning: this LOOKED disgusting. I wouldn't serve it to people who doubt your cooking skills or kids who are still in the "it looks funny so I won't eat it" phase. It was delicious however, and I'm definitely making it again, maybe adding some veggies to the pot next time before that final hour of cooking. (Fiancee's idea - he thought celery would be a nice addition.)

Pork Chop and Feta Skillet

I didn't change a thing with this recipe (which is unusual for me!) and it was fantastic! I served it with a recipe for Garlic Broccoli Spears that I found on this site, and the fiancee RAVED about it. I'll be making this one again soon!

Garlic Broccoli Spears

This was simple and delicious! I used frozen broccoli florettes instead of fresh spears, and it was excellent. I added a little more lemon juice and a bit more garlic than the recipe calls for, just because I wanted a more intense flavor, and it didn't disappoint. I'll keep this one on standby as a quick and easy side dish. I've always got all of the ingredients on hand.

New England Clam Chowder I

I'm glad I read all of the reviews before I made this, and made some changes, because the result was truly a 5 star chowder! I added celery with the onion, used almost no water and all of the clam juice from the canned clams, and thicked just a tiny bit with some instant potato flakes. I was VERY impressed with the results. Give this one a try - it's one of the best soups I've ever HAD, much less made!

Brazilian Chicken with Coconut Milk

I don't know how it's possible for one dish to be both spicy and bland at the same time, but this one was both. It needs.....something. I don't know what. The chicken came out spicy and tasty, but I guess the sauce didn't really do it for me. I can't say how authentically Brazilian it is, since I've never been to Brazil, but it wasn't a curry, like a lot of reviews have said. I'd probably make it again, but I'd have to do some major tweaking with the flavor of the sauce for it to move up into regular rotation.

Salmon with Mango and Brie

I wanted this to be so delicious. It's 3 of my favorite things in the world, all together in one dish! In reality, it was just OK. The flavors didn't work as well together as I would have thought. The brie gets a little lost. I'd make it again, but I'll have to play around with the ingredients, maybe a less flavorful fish or a stronger-tasting cheese. One warning - make sure your mangos are very ripe, or you won't have a sauce, you'll have caramelized mango chunks. Mine were way to underripe to turn into a sauce. We still enjoyed them as a "warm mango salsa" sort of thing, but if you're looking for an actual sauce, start with mushy mangos.

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

The only reason this recipe is getting 4 stars instead of 5 is the fact that it was difficult and a little time consuming. The "prep time" shown was way off. Plus, I had some chicken breasts that were too thick to roll up properly (even after pounding them flat) and too thin to cut a pocket in them to stuff them. I wound up breading and pan-frying the chicken breasts alone, and then, after moving them to the baking dish, just piling the "stuffing" on top and baking them that way. Still came out delicious though - I'd make them again, now that I know how much time to budget for cooking.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

This was delicious! I marinated the chicken for a day to give it extra flavor, and instead of just using plain mango and avocado chunks, I combined them with the juice of one lime and some fresh cilantro and parsley to make more of a "salsa." The chicken was moist and flavorful, the salsa was amazing, and the citrus sauce complimented it perfectly. I served this with some frozen corn seasoned with butter, salt, pepper, and dried thyme leaves. My fiancee called this meal "crazy tasty", which is his highest honor! I'll be making this one again soon. The only thing I'll change is that I'll probably add more red pepper to the marinade next time, as this wasn't 'spicy' at all, but other than that, I'd say it was pretty perfect.

German Spaetzle Dumplings

These turned out pretty good. I don't own a spaetzle maker, so I used a tip from the reviews and used a zip-top bag with one corner cut off. They wound up being bigger than I'd expected and kind of ugly looking, but they were still very tasty. I served these with "Vienna Schnitzel" (from this site) and had a great, hearty Bavarian dinner.

Green Chili and Cheese Chicken

This was a perfect weeknight dinner. It was quick, easy and super tasty. I served it with some boxed Spanish rice (which took the same amount of cooking time as the chicken, so everything came together nicely) and I thought the whole meal was great. The only reason I gave it 4 stars instead of 5 is that my fiancee didn't like it as much as I did. He thought it was a little on the boring side, but I think that has to do with the fact that I'd made him a week full of much "fancier" meals before this. I told him that this was my reward for making him meals that took twice as much prep work! This is as close to a "night off" that you can get and not order pizza. I'm making this one again, whether he likes it or not!
