Onion Chicken in Balsamic Sauce

I used 4 chicken quarters instead of two, but kept the rest the same, and there was still a lot of sauce. The balsamic vinegar and the tomatoes made a really great flavor combination. I added the tomatoes to the stock reduction right after deglazing the pan (before it had reduced) to make sure that they got nice and soft. Really good recipe!

Corn Fritters with Maple Syrup

Mine didn't make the nice patties as shown in the picture, more like free-form blobs, but the taste was amazing and the texture was perfect. I can't say I'll be breaking out the deep fryer for breakfast all that often, but these are worth doing it once in a while!

Hearty Halibut Chowder

Like some of the other reviewers, I used cod ($3/lb) instead halibut ($13/lb), but other than that the only change I made was to add a few dashes of Old Bay seasoning. I really liked the result; creamy and rich and delicious.

Scottish Bubbles and Squeak Patties

Really, really good. I think the next time I make them, I'll make 8 smaller patties instead of 4 large ones, and pan fry them rather than use the grill pan, so that there's more crispy outside. But definitely making this again!

Meatloaf that Doesn't Crumble

This was truly a great meatloaf. I went light on the ketchup because we're not really fans, and I think I could have even left it off entirely. This one is a keeper.

African Curry

I upped the curry powder to about a tablespoon and added a few dashes of cayenne, and the seasoning was pretty spot on. I kind of wish I'd left out the lemon juice at the end though - it tasted better before I added it.

Swiss Chicken Casserole II

The cook time was WAY off. My chicken was still raw and needed an additional 20 minutes uncovered at 400 deg to be edible. We agreed that we both really would have liked some veggies in there too - peas, broccoli, mushrooms, SOMETHING. Probably not making this one again, sorry.

Good Old Fashioned Pancakes

SO GOOD. I could eat this every day. The only change I made was to add some strips of red bell pepper, since I had one to use up. This one is definitely going to be made a lot around here.

Italian Chicken with Pesto Potatoes

KILLER. The only change I made was to use two slices of prosciutto per chicken breast, since one wasn't really cutting it. Plus, hey, more delicious prosciutto. Win/win. I can't wait to make this again.

Next time, I would cut down or even omit the cayenne. We like spice, but it was a bit overpowering. Otherwise, this turned out really moist and delicious.

Chicken Cordon Bleu Casserole

This was good. I would have liked some more "stuff" in it though. It seemed like it was missing some veggies (peas, mushrooms, or broccoli would be nice) or at the very least, some noodles. If I make it again, I'll probably monkey with it some and see what I can come up with. As written, it's good, but lacking something.

A good classic base recipe. We used fresh mushrooms instead of canned (personal preference), and added a little bit of sour cream since others had said it was dry, and we were pleased with the results.

Chicken Chimichangas with Sour Cream Sauce

These were delicious! I wish I'd used less water as others have suggested to cut down on cook time, but other than that, no complaints. One note from me - I thought I could skip the toothpicks, figuring if I rolled them tight enough I wouldn't need to. My first chimi kind of exploded in the deep fryer, and all of the cheese leaked out. I made sure the rest were held closed with toothpicks! Don't skip that step!

Wisconsin Native's Beer Cheese Soup

I'm a Wisconsin girl, born and raised, and I liked this soup a lot. It's not the best Beer Cheese Soup I've ever had, but it was pretty close to right. I did as others have suggested and made mine all in one pot, and sweated the veggies until they were VERY soft. I used a good sharp Wisconsin cheddar and one of my favorite Wisconsin beers - Ale Asylum's Ambergeddon - and the flavors really shone through. I skipped the popcorn entirely though, since I always prefer a soft pretzel with my Beer Cheese Soup.
