Avocado Feta Salsa

Reviewed: Jul. 25, 2010
I am going to stick with parsley and oregano instead of cilantro. I love cilantro but did not like it as much with that change. This recipe always gets rave reviews from party guests.

Mexican Bean Salad

You can't go wrong following this recipe exactly but I always add a can of pinto beans too because it is my son's favorite and there is still plenty of dressing. Everyone I make this for always insists on the recipe.

Oatmeal Peanut Butter Cookies III

Reviewed: Jan. 8, 2008
Too sweet for us...but will definitely try this recipe again with less sugar. These spread way out when baked so make sure you start out with a very small amount of cookie dough. You will want small cookies to double with filling or else you will be looking at a cookie that is dinner size.

Homemade Peanut Butter Cups

Reviewed: Dec. 18, 2007
WOW! These are great. I followed the recipe exactly except I didn't use crunchy PB. I crushed the graham crackers to almost powder consistency. I didn't think they were difficult at all. I used the foil type 1 inch cups (found at most craft stores) and placed them in a mini muffin pan while I piped in the chocolate. A helper is a great way to make it go fast. Everyone agreed that these were better than Reese's (who would have thought that was possible). Thanks!

My friends who don't normally eat dessert had seconds of this cheesecake. Just wonderful (after following all of the great recommendations). Thanks! This one is a keeper

Raspberry Trifle

Reviewed: Aug. 27, 2007
Huge hit! I brought this dessert to a large party and everyone raved and went back for seconds. I thought it was easy to make. I used angel food cake instead of pound cake and used bittersweet chocolate shavings instead of cocoa powder. If you drizzle the berry juice on the angel food cake it won't be soggy if served within 6 hours but after that it got soggy. Next time I may not drizzle the juice on the cake layer. I will definitely make this again and again! Thanks!

I made this due to all of the 5 star reviews and was disappointed. Everyone tried it at my brunch gathering but no one went back for seconds...and I did follow the recipe exactly...hmmm.

Chocolate Eclair Dessert

Reviewed: Feb. 1, 2007
My husband's new favorite dessert and the easiest and biggest hit yet. I entertain quite a bit and my friends think I am the dessert maker. I made this recipe over the summer and now it;s the only one they request. To spread the chocolate frosting...just heat the container in the microwave for one minute and it will be pourable. The frosting will firm up nicely in the refrigerator over night.
