Curried Honey Mustard Chicken

This was really good. However, I cut out the butter completely and just poured a bit of olive oil into the pan before adding the chicken and marinade. The marinade has such a great flavour that you don't miss the butter at all. I used half Dijon and half mustard with seeds. I also dredged the chicken in whole wheat flour before covering it with the sauce and baking it, which thickened the sauce quite nicely.

Spinach Salad With Berries and Curry Dressing

This is the best no-oil dressing ever! I poured it over a spinach salad with strawberries, walnuts and grilled chicken. So good.

Chicken Stew With Coconut Milk

This was pretty good. I didn't have potatoes so I used cauliflower, and I substituted peas for lima beans and fresh chopped tomatoes for canned. I cooked it on the stove and thickened the stew with a bit of flour mixed with water. I had some spicy mango chutney left over from the last time I made a curry flavoured dish, and for me that's what really made this good - the mango complemented the chicken so nicely.

Chocolate Chocolate Chip Cookies II

I made this exactly as written, however I wish I had used only half the amount of butter. I found these cookies to be greasy and the butter overpowered the chocolate taste. I brought them to a staff party though and everyone there seemed to love them, just not for me.

Asparagus and Cashews

I scaled this down to just one serving, used less oil, and toasted the cashews first in a skillet (just the nuts, no extra oil). The flavour was great!

Fluffy French Toast

I love this recipe. I use cinnamon raisin bread and it tastes delicious. Surprisingly, I've found that you can freeze these leftovers if you've made too much; just wrap slices indiviually in plastic wrap and tin foil, then unwrap and pop in the toaster for a quick breakfast. It tastes just as good this way.

Red Bean Salad with Feta and Peppers

This recipe is pretty much identical to one from Anne Lindsay's Lighthearted Everyday Cooking.. I made a few changes to the recipe seen here- I used a 19oz can of white kidney beans because I prefer them to the red kind, used 1 cup chopped cabbage and 1 cup shredded carrot, feta cheese that was marinated in red peppers and olive oil, and I added a bit of sugar to the mix too as I thought the dressing was a little sharp. My best advice for this recipe: make it the day before!! I mixed all the ingredients together and chilled for 3 hours before eating, which definitely was not long enough, the flavours were all much too aggressive. I tried it again today and it was SO much better, everything blended together perfectly. This is a great recipe :)

Chocolate Bliss Chunk Cookies

This is an edited review- I first gave these cookies 4 stars, however now that I think about it, they deserve a 5 (I'm just indecisive I guess lol). They do not spread, however they are also chewy- you usually don't get both of these qualities in one cookie. Mine only needed 8 minutes at 370 degrees, and the next time I make these I probably will use just a little less baking soda, but otherwise these are wonderful. ****I have made these cookies many many times since this review, and the BEST way to make them is with high quality white chocolate chunks, then rolls the cookies in vanilla bean sugar before baking. It will be the best cookie you ever eat.****

Caramel Apple Pork Chops

I made this for dinner last night and it was good, but nothing special. Then I had the leftovers for lunch today, and they were soo good! I was pleasantly surprised. I think I'll play around with this recipe..

Low-Fat Blueberry Bran Muffins

I love bran muffins, and for a low-fat recipe, these are great. The only thing I changed was to use all whole wheat flour. I will definitely make these again.

Seminary Muffins

These were gone before I could even get a picture of them.. I left out the chocolate chips and walnuts and used half whole wheat, half white flour. They were delicious- the oats provided a great texture and the flavour was awesome. I will definitely be making these again.
