Mexican Chicken Corn Chowder

Super yum! I used 2 cans fat free evaporated milk instead of the cream. It would have been good to add an extra can of creamed corn or even regular corn. My kids said "more tomatoes!". Red bell pepper would be good as well. Oh, and I used cheese as a garnish.

Middle Eastern Rice with Black Beans and Chickpeas

My husband and kids didn't care for it, and I thought it was "OK". I prepared it as the recipe stated and found it a little too bland for my liking. It's worth trying again though--I'd use less turkey and season it (like one reviewer said) with garlic, cumin seeds, coriander, salt, and maybe even a little lemon juice so it'd have more flavor. I'd also halve or even "third" the recipe--there was way too much to eat, even as leftovers. I'd also try yogurt and olives (kalamata) as garnish, as another reviewer did.

Golden Chicken Tenders

My family and I thought these were so-so. They could've used added seasonings (even a little cayenne) to make them more interesting. I liked them better the next day, when the coating was soft.

Ground Turkey Noodle Bake

This was a hit with my husband, kids and visiting friends! I'd do it again, but add some seasoning to the cheese sauce and noodles, such as parmesan cheese, basil/oregano/italian seasoning, and some pepper.
