Black Bean Hummus

Reviewed: Feb. 9, 2013
Great hummus. I bought the olives not realizing they were merely a garnish....I did not read through the whole thing before deciding to try it. Anyway, not being a fan of olives in their most humble form, I threw them in the food processor and blended them in. This recipe is way too functional to be called bland. Really solid black bean hummus...really wonderful flavor.

I don't eat meat so this was really for my husband and daughter. The hubby said, "Best soup I have ever had".

Spicy Shrimp and Red Bean Soup

Reviewed: Nov. 7, 2012
The combination of ingredients listed here scared the life out of me. I had to try and see what all the fuss was about. Turns out, it's a very good soup! I added some veggie broth to the pot because we like our soup soupy and not dense. It was an all around winner!! We will be making this again for sure.

Whole Wheat Sweet Potato Muffins

Reviewed: Apr. 1, 2012
Very, very good! I am not a sweets fan and was worried these would be more like candy, but I was worried for nothing. Like others, I used 1/2 c Agave instead of honey, but otherwise I stayed true to the recipe.

My first attempt at stuffing - perfection. Even us non-stuffing eaters ate some.

Alyson's Broccoli Salad

Reviewed: Oct. 12, 2011
Yum! Loved substituting the red grapes for the raisins. Had to get creative getting onion flavor without adding onion pieces as this was a requested dish of a known onion-hater, but it worked out beautifully. Really good recipe.

Really good soup. I am not a huge fan of potatoes, so I diced them super small. Definitely a keeper!

Chicken Soup With Black Beans and Corn

Reviewed: Sep. 4, 2011
Great soup! When I make for my family, it's made as written. When I make it for myself, I use veggie broth and leave out the chicken. A really great soup either way.

Black Bean and Wild Rice Salad

Reviewed: Jul. 21, 2011
Finally!! A healthy and delicious alternative to boring old pasta salad! Loved the freshness and color of this dish. And the flavor is fantastic. In Indiana, it's not always easy to find TRGN vinegar so I had to sub a seasoned vinegar instead. Made for a healthy lunch carry in and even my unhealthy, Mountain Dew drinking co-workers liked it. Great recipe.

Skillet Zucchini

Reviewed: Jul. 19, 2011
My husband and daughter are not zuch lovers unless it's in bread form. After her first bite, my daughter who was in the middle of another conversation said, "First of all, whatever this is -awesome!..." Then proceeded with her previous thought. They both thought it was potato at first - weirdos. Anyway, I made as is - just added a bit of garlic. Wonderful dish!

Fish Chowder

Reviewed: Mar. 4, 2010
Seriously good chowder. Although I limit my food intake to veggies and fish/seafood, I am not one who generally appreciates corn or other random veggies in a chowder so I tried this recipe the minute I realized it didn't have all of that. I only used one can of evaporated milk and added a splash of red wine vinegar to the end of the cooking process. Everything else was exactly as written. Thanks for posting this and an even bigger thanks to those fisherman who shared!

Rosemary Pork Roast

Reviewed: Feb. 16, 2007
I am not a meat eater, but I made this for my boyfriend about a week ago. His exact words were "That's the best piece of pork I've ever had". I baked it covered for three hours at a lower temp and then uncovered for an hour at 375. Just perfect! And the smell alone made me rethink my vegetarian ways.
