Thai Red Chicken Curry

LOVED IT. I doubled curry paste and added cumin seasoning and a bit of salt. I also added some yogurt on top at the end. Very yummy. Will definitely be making again. I also couldnt find the LITE coconut milk - it was WAY rich, so I'd say definitely find the LITE if you can. If not, use 1/2 reg milk and half coconut milk.

Green Bean Casserole I

It's green bean casserole, how difficult can it be? I used this recipe as a ratio guide. I always add garlic and onion powder, salt and pepper to the green beans and mushroom soup. I saw a suggestion to use sour cream instead of milk and I will definitely have to try that.

Creamy Banana Bread

this is the best banana bread ive EVER made it. i hate to say it, but its even better than my mothers! i made this for work and was practically begged to bring it in for the next potluck. if i even mention bananas they ask when im making more bread! thank you than you!

Chocolate Chip Cheesecake I

This is absolutely the best, easiest cheesecake recipe I've ever used! I use it all the time. It's even good to use as a base. I've substituted chocolate chips with blueberries, strawberryies and cherries and it still comes out great everytime! I recommend this recipe to everyone. Since I've been making this recipe for over a year now I've made a few changes. I add 3/4c of sugar and 2/3c of sour cream and 2 egg yolks for a denser richer cheesecake.

Burrito Pie

LOVE LOVE LOVE this. I followed the recipe exactly except I used more taco seasoning and a little more meat, and lots more cheese. It turned out GREAT. Wonderful flavor, filling and easy. I would recommend this to anyone. EDIT 7/30/09 - this is still a household favorite in the winter months. I normally add more tortillas now so they don't get too soggy while cooking.

Day Before Mashed Potatoes

These are the absolute best mashed potatoes I've ever had. I served these for Thanksgiving - tripled the recipe because I had a lot of guest and they ate every last bite of them before the night was over! I will definitely be making this again. I did add more butter than listed - After I baked it I put dollups of butter on top and served it. Big hit!

Fusion Chili

I've made this chili about 4 times now in the past year. LOVE LOVE LOVE IT! The first 2 times I made it exactly as the recipe called for and it was a bit too soupy for my liking and didn't really have the LOOK of chili, but still was delicious. The last 2 times I've made it, I've used ground pork sausage instead of the Italian sausage and used about 2 medium sized cans of tomato sauce along with the diced tomatoes the recipe called for; it was absolutely delicious and definitely looked and tasted more like chili. I normally serve it with sour cream and corn bread. This is definitely my "go to" chili recipe.

Shortbread Pie Crust

Made this crust for a dutch apple pie and it turned out delicious! Was super simply to throw together at the last minute and imo taste way better than regular pie crust. As another user mentioned, the crust will bubble a bit if you don't use pie weights.

Cheesecake Brownies

I made this recipe with the following changes. 2 8oz pkgs of cream cheese 1 egg 2 tbl sour cream (to give it that real cheescake flavor/bite) 1/2c sugar I also added a tablespoon of vanilla to the brownie batter as well. My boyfriend loved it. I will be making this again. I think the brownie would've overwhelmed the cream cheese if I hadn't added more cream cheese, so this only gets a 4 star.

Mom's Shepherd's Pie

Good base recipe. Made the first time exactly as recipe states. Wasn't too thrilled; the flavor was a bit too bland for my household's taste. Made again with the following changes and got a WOW from my bf: diced 1med onion and sweat in 2 tblsp olive oil. cook until translucent & add 2 tbsp minced garlic. cook for 2-3 minutes. Add 2lbs ground beef sirloin, parsley, salt and pepper and brown, drain excess. Add 15oz tomato sauce, 1 can peas, 1 can green beans, 1 can corn, mix together. Add flour and water mixture (2.5tblsp flour/4tblsp water), mix well. place into baking dish, top with colby jack or sharp cheddar cheese (I used about 1-2 cups) and then mashed taters (I did cheat and used boxed mashed potatoes that I doctored up with chives, garlic and onion powder) and cook for 20mins. take out and brush top with butter and milk and bake for 5 more minutes. Not sure if this can still be called shepherd's pie after my alterations, but we love it.

Three-Cheese Spaghetti Bake

The sauce is really what makes this recipe. I've made this numerous times (very messy to make btw), and I find that the homemade sauce I usually make with hamburger and sausage makes this recipe 5*. If the sauce is sub-par the dish will be sub-par. That probably can go without saying, but I would recommend not skimping on the sauce for this. I do remember that I had to use more sauce than the recipe called for and I always add more cheese. I normally whip this up as a last minute dish if I've got leftover homemade spaghetti sauce in the freezer.

BBQ Pork for Sandwiches

Very yummy, but I had to add to the recipe to make it yummy. I seasoned the pork with seasoning salt, garlic and onion powder, cumin and pepper. I cut up 1 large onion and placed it at the bottom of my crock pot, putting the pork on top. I don't think it would've been as yummy without the added flavors of the onion and seasoning.

White Cheese Chicken Lasagna

Just made this recipe this afternoon. My bf loved it! I think the following changes may have helped, because without them I could see how some reviewers would call this recipe too bland. Chicken Prep: Melted 1/4 cup of butter in a stock pot, added onions and garlic, let them cook until nearly translucent. Added 4 whole breast of chicken seasoned with salt, pepper, and onion powder, cooked on each side for about 2 mins per side then filled the stock pot with boiling water. Once chicken was cooked through I poured out the water and chilled the chicken in the fridge. After chilled I shredded instead of cubing the chicken. 2nd change, I added the entire cup of parmesan to the sauce and an extra 1/2 c of mozzarella. Sauce was not soupy at all. 3rd change; I took an 8oz pkg of softened cream cheese, whipped it, added the spinach to the cream cheese, seasoned with salt, pepper, a pinch of nutmeg. Then I added the ricotta to the cream cheese and spinach mixture. I layered per the directions and cooked for 35-37 mins. It was a huge hit! Don't know if this will be a regular on the house hold menu since there are SOOO many steps involved.

Eggplant Parmesan II

I can only give 4 stars because I used this recipe as a base and modified it a bit. First I added ricotta cheese, I oven baked the eggplant and then lightly toasted it on the stove, I added oregano, garlic, onion powder and a dash of celery seasoning to it as well. It turned out delicious with the extra cheese and garlic. I will definitely be making this recipe again and again!
