Jenny's Sweet Waldorf Salad

This salad turned out great! However, I used the recipe more as general guidelines than strict instructions. I used 5 small/medium Fuji apples, two large stalks of celery, 1.5 cups of grapes, and 1 cup of dried cranberries. I left out the pear and raisins and used 3/4 cup of walnuts instead of the almonds. I followed the dressing instructions fairly closely except that I used fat-free mayo and reduced all the ingredients by around 1/3. (I also tossed the chopped apples with the lemon juice so they wouldn't brown.) I appreciate a recipe that can be tinkered with this much and still turn out so delicious. The cinnamon was a great touch. The salad was almost too sweet, so I'd recommend taking care with the sugar, especially if you use the full amount of raisins and dried cranberries.

Butterscotch Sauce II

This is very good and VERY sweet. I used margarine instead of butter and added an extra tablespoon. I kept it over the heat for a while after the butter melted until the sugar wasn't grainy anymore, but I was careful not to let it boil. I tried it over ice cream and popcorn and enjoyed it both ways. I saw a review saying that this was a very thin sauce. For me, it was thin when it was hot but it thickened up quite a bit when it cooled. On ice cream, it behaved more like hot fudge than a syrup. I think this will be more popular with kids than adults because it's so very sweet.

Baked Lemon Chicken with Mushroom Sauce

My husband and I loved this dish! However, I made some changes based on the reviews, and I feel that those changes are necessary to make this a five star recipe. The most important change is that the sauce MUST be increased, especially if you're serving this with rice as suggested. I doubled the sauce (except for the butter) and we still wanted more. Next time I will increase the sauce even more. Also, I recommend adding spices to this dish. I added garlic, thyme, italian seasoning, salt, pepper, and lemon zest to the chicken and some garlic to the mushroom sauce. I do like my food well-seasoned, so some people may not like to add as much as I did, but I do recommend adding at least a little spice. I also turned the broiler on for the last few minutes of baking the chicken so it would brown. I will definitely make this again!

Cheesy Ranch Potato Bake

This was okay, but I didn't love it. If it were healthier, I'd probably make it again, but with all the ranch dressing and cheese, I doubt I'm going to give this another try. It would probably be better with bacon as other reviewers have suggested.

Tres Leches (Milk Cake)

This was good, but it seemed to need to be eaten with something to give it flavor. Milk is pretty bland. Perhaps I'm being a bit unfair, because this is an ethnic food that I'm not familiar with, so bland is probably how it's supposed to taste! I thought it would be very good with berries. My husband wanted cream cheese in the topping. I had a lot of extra liquid, even after letting the cake soak in the filling overnight.

Greek Salad I

This was good, but for some reason it didn't seem like a cohesive recipe. It didn't feel like a lettuce salad to me, and yet the primary ingredient was lettuce. I wish I could pinpoint what I'd like to change, because I'd love to tinker with this and make it again, but I'm not sure what changes to make. I'm actually thinking of making it into a pasta salad. That said, this was still a tasty dish, and I made the following changes: added a few tablespoons of red wine vinegar and some sugar to the dressing, reduced the olive oil by about a tablespoon, reduced the onion a little, and used kalamata olives instead of black (a great substitution if you don't mind the extra cost). The amount of dressing didn't look like enough, but it was just right. UPDATE: I made this with orzo pasta instead of lettuce and I really liked it. Lettuce is healthier, of course, but I'll make it again with the pasta substitution.

Tomato-Cream Sauce for Pasta

I would have given this recipe only three stars, but my biggest problem with it may have been something I caused. I thought it was too sweet. However, I substituted fat-free half and half for the heavy cream (as suggested by other reviewers), and fat-free half and half is sweetened, so I'm guessing that was the problem. I don't think I'll make this again, although I ate it all. I'd recommend that people taste the sauce before adding sugar, especially when they make a substitution.

Asian Orange Chicken

I love the orange sauce in this recipe. (I used orange juice concentrate and omitted the green onion because my husband doesn't like it.) The breaded chicken was okay, but I think next time I make this I'll try baking it instead. Several reviewers mentioned that this recipe called for too much cornstarch, but I don't agree. I tried reducing the cornstarch and I thought the sauce was too runny.

Greek Garbanzo Bean Salad

This may be an unfair comment about a dish that plainly calls itself a bean salad, but I thought it had too many beans! The flavors were good, though. I probably won't make it again, but if I do, I'll double the tomatoes, add an extra cucumber, and use only one can of beans. I added more feta cheese and definitely thought that was a good choice. A note about the can of olives: in my store, the olives were weighed without factoring in the weight of the liquid. The can I bought was the same size as the 15 ounce cans of beans, but the weight displayed on the can was only 6 ounces. UPDATE: I made this again with an extra cucumber, only one can of beans, and extra tomatoes and feta cheese. It got rave reviews from my family. I like it much better with these changes.

Ratatouille

This was a big hit with my family! I like it with more tomato and plenty of salt and parmesan. I keep trying to cram it into a 9x13 dish, which doesn't work very well, but I never seem to learn. Maybe now that I'm putting it in writing I'll remember to use a bigger dish next time!

Greek Style Potatoes

What a delicious way to eat potatoes! I increased the chicken bouillon to three cubes, used oregano instead of rosemary, added a little salt, and served the potatoes with feta cheese. I wasn't in a hurry, so I didn't try an alternate cooking method as many reviewers did. It's actually somewhat convenient that these take so long to cook because if you're making a meal with several different dishes, you can start this one well in advance and not have to do as much juggling right before the meal. I cut the potatoes in fairly small pieces and I think they still took about 2 hours to cook, so make sure to plan ahead. The only problem I had was that my husband, who is on a diet, thought these smelled way too tempting and forbade me to make them again unless he's allowed to eat them!

Marrakesh Vegetable Curry

This gets high marks for nutritional value, but I wasn't wowed by the flavor. Some of my family members liked it a lot, but others just nibbled. I think it was a bit too spicy for some of them. Also, doesn't two tablespoons of raisins seem a bit silly? I added more to my portion.

Affy Tapple Salad

This is a delicious and interesting salad. I prefer it with sweet apples (like Fuji), but I think some people would like the contrast of using some tart apples as well. I happen to love the smell of vinegar, so I enjoy the aroma as I'm cooking the tapioca mixture.

Cabbage Rolls II

I doubled the sauce, used ground turkey instead of ground beef, and followed another reviewer's suggestion to freeze and then thaw the cabbage to allow the leaves to peel off easily. I didn't like this much the day I made it, but for some reason, I really liked the leftovers. However, it was difficult to eat the rolls without them falling apart. I think I would prefer a recipe with the same ingredients but layered with shredded cabbage so it's easier to eat. Also, the sauce got very runny. Maybe this was my fault because the turkey wasn't lean enough, but I'd rather not pay more for extra lean turkey. If I make this again I might try using tomato paste in place of some of the tomato sauce or undercooking the rice so it will absorb the juices. This recipe has a lot of potential, but I won't make it again without changing it.

Caramel Apple Dip

I made this recipe for a party and it wasn't a big hit. I think it needed to be labeled because people weren't sure what kind of dip it was. (Someone asked me if it had peanut butter in it.) However, I thought it tasted very good, and it was easy to make, so I might try it again sometime. I'll just be sure to let people know what it is.

Soba with Toasted Sesame Seed Sauce

I made some poor choices when preparing this recipe that hurt the taste. However, I'm giving it five stars because every part of the dish that was true to the recipe tasted great. My worst decision was to substitute frozen asian veggies for the broccoli and green onions. They just weren't good quality. I also tried to use black sesame seeds because those were what I had on hand, but I couldn't tell when they were toasted properly and I burned the first batch. Rather than risking burning the rest of my sesame seeds, I just added them without toasting. That probably affected the flavor. Anyway, I'm not going to penalize my rating of this recipe for my poor choices. I think it would have been very good if I had followed the recipe more closely.

Quinoa Side Dish

This is good, but it's not very memorable. I like quinoa because of the interesting texture, but I don't think this will be my go-to quinoa recipe. I sauteed the onion and garlic in the butter before toasting the quinoa and I used dried thyme instead of fresh.

Fresh Broccoli Salad

This was a fine salad, but it didn't suit my tastes. My main complaint is that it was too sweet. I also thought that the onion flavor was very strong even though I only used half an onion. It didn't bother me much when I was eating, but I had onion breath for a while afterward. I'm glad I tried this because it was interesting, but I don't think I'll make it again.

Healthy Garden Salad

This is a tasty salad, although I think it could use a bit more zip. I used olive oil instead of grapeseed oil, but other than that I followed the recipe closely. My least favorite ingredient was the edamame, and it also contributes a lot of fat to the salad, so I think next time I'll cut back on it and try adding some pasta and additional spices (maybe chili powder). I did really like the dressing, but it just wasn't strong enough for me.
