Black Bean Brownies

These are good considering that they have beans instead of flour. But they don't taste as good as your standard (less healthy) brownie. I'm not sure the nutritional profile is good enough to make these worth making again. I'd usually prefer a smaller portion of a more decadent treat than a slightly larger portion of this. I should mention that I didn't use the coffee, which might have improved the flavor. I couldn't taste the beans even without the addition of coffee.

Easy Mexican Casserole

This turned out a little too runny for me. I don't think it was supposed to be that way, so I may have needed to simmer the meat mixture longer or use a thicker salsa or sour cream. It tasted delicious, but the chips on the bottom were totally soggy and hardly noticeable in the mixture. Next time I may leave the chips out of the recipe and just serve with them on the side. It makes a great dip or chip topping. I added a little garlic and taco seasoning to the meat mixture, and it was very flavorful. I used ground turkey and light sour cream, but I'm still not thrilled with the fat content of this recipe. I also used canned diced tomatoes with chilis instead of fresh tomato, but I think it would be good either way.

Lentils and Rice with Fried Onions (Mujadarrah)

This is a delicious and nutritious dish. My reason for giving it four stars instead of five is that I think it needs a lot more onion and that the onion should be cooked longer. I prefer about four medium onions, cooked until they're caramelized. I sometimes add other spices, like chicken bouillon, cumin, and cinnamon, but those aren't really necessary. The yogurt is necessary, though! Don't skip it just because the recipe says it's optional.

Award Winning Soft Chocolate Chip Cookies

I was tempted to give this five stars because it is a very good recipe. However, I think I prefer the taste of the classic chocolate chip cookie recipe, without the pudding mix. The thing I love about this recipe is that the cookies always turn out looking perfect, they stay soft, and they don't flatten in the oven. This makes this recipe very handy when you're going to take cookies to an event where you want them to look nice! But when I make cookies just for my family at home, I'll skip the pudding mix.

Dill Pickle Meatloaf

In my family, we're not big fans of meatloaf. I thought the dill pickles were great in this, though. My husband, who doesn't like pickles, scraped off the pickles and thought it was fine.

Sweet Pork for Burritos

I make this regularly, but I don't follow the recipe strictly. I use chicken instead of pork (because I don't eat pork, although I'm sure pork is terrific in this) and cook on low for 8-9 hours instead of 5 hours in the first step. I leave out the chilies (again, I'm sure they're good, but my husband doesn't like them) and usually reduce the seasonings. I usually serve this on toasted hoagies with nacho cheese topping. Any way I serve it, I like to include a more savory element (usually cheese) to counter the sweetness. This recipe is fantastic, though, and my husband requests it frequently.

Stuffed Guinea Squash (Eggplant)

I was surprised how much this tasted like the turkey stuffing I eat on Thanksgiving! I used this recipe as a guide, but I made quite a few changes. I baked the eggplant shells while I was cooking the filling. I used oil instead of butter, I added spices (garlic, lemon pepper, parsley, seasoned salt), I used fewer mushrooms and added a bit of orange bell pepper. I also left the cheese out of the main part of the stuffing and just sprinkled some on top about 5 minutes before I removed the stuffed eggplant from the oven. I liked this, but I think I'll experiment with it some more to see if I can make it even better.

Slow Cooker Chicken Stroganoff

This is perhaps an odd complaint, but I thought this was too rich! I used reduced-fat cream cheese, but I did use the full amount of butter. This was extremely easy to make, the house smelled fabulous, and my husband liked the dish (which I served over pasta). I feel like I need to find the right way to tweak this recipe to make it great. I'm going to try doubling the soup and chicken and perhaps reducing the margarine.

Spinach Quiche

I was cooking for both my vegetarian sister and my meat-loving husband and family members all along the spectrum in between, so I had fun with this recipe! I made two quiches, one that was fairly similar to this recipe, and one that used this recipe as a base but turned out very different after I left out the spinach and loaded it up with ham. Both were very popular! One note: this recipe makes way too much for one pie crust. If you don't make two quiches, you'll have to reduce some of the ingredients. (You should reduce the butter anyway.)

Ghirardelli® Ultimate Double Chocolate Cookies

These are REALLY chocolatey! I left out the walnuts, but other than that I followed the recipe. When I mixed the chocolate chips into the dough, it thickened up quickly and I didn't think it was difficult at all to roll into logs. It was hard to cut into slices later because of the chocolate chips, but they didn't have to be nice-looking slices, so that wasn't much of an issue. I froze a few of my logs and made some cookies a week later, and they were just as good.

Cooked Fruit Salad Dressing

This was good but not memorable. Despite my constant stirring, the egg cooked into chunks that I had to strain out. I would have liked this better if it had been thicker, because it didn't stick to the fruit well enough. It did taste delicious, though.

Anniversary Chicken I

This was just an okay recipe for me, but my husband loved it! He offered to make me another meal so that the leftovers could be reserved for him. I couldn't find teriyaki basting sauce, so I just used a marinade and let the chicken sit in it for an hour or so. I may have liked it better with more teriyaki flavor, so perhaps that was a bad change on my part. I cooked and crumbled bacon instead of using a can of bacon bits, and I left off the green onions because my husband doesn't like them. I probably would have preferred the chicken with the green onion and more bacon. I thought it was kind of bland. I also skipped the sauteeing and just baked the chicken for a little while before adding the other ingredients.

Michael's Foccacia Bread

This bread was a hit with my family. Some comments based on the reviews: the onion will cook with the bread, so there's no need to cook it ahead of time. I was concerned about the amount of salt, so I reduced it, and it was good with less. I think I would have personally preferred more salt, but some of my family members didn't want more. Don't make it in a 9x13 pan. Use your largest cookie sheet or a jellyroll pan unless you want the bread to be very tall. You can change the toppings according to your tastes or what you have on hand. I used seasoned salt, garlic powder, and italian seasoning.

Seven Layer Tortilla Pie

My family raved about this dish! However, I made some significant changes. Seven layers just seemed like too many for one pie pan, so I made two pies with five layers each. I added corn, extra tomatoes, and a little fresh spinach to the black bean mixture. I used refried beans instead of pinto beans, and I added a little taco meat to that mixture (although the vegetarian pie was a little more popular). The final product looked great and tasted even better!

Asparagus with Cranberries and Pine Nuts

This is a delicious way to eat asparagus. I removed the pine nuts and cranberries from the pan when the pine nuts turned brown and then added the asparagus. (I don't have much experience with pine nuts, but they never looked translucent to me. Maybe I should have cooked them longer, but I was afraid they'd burn.)

Cherry Tomato Corn Salad

Tater Tot Taco Salad

My husband really liked this dish, to his surprise. I didn't enjoy it quite as much, but I like its versatility. I think it would be a good meal for a large group of people who could pick and choose their toppings. (Even the pickiest children would probably eat the tater tots!) I would like to try adding beans next time.
