Sweet, Sticky and Spicy Chicken

This is hard to rate because I didn't follow the recipe and I think I caused my own problems, so I'm giving it five stars because it tasted great. I modified this recipe based on the reviews, by dredging the chicken in flour before browning it. This didn't work out well for me, with the sauce overthickening and just turning the whole thing into a goopy mess. However, it was a delicious goopy mess, so I'll try this again! Next time, I'll skip the flour. If the sauce doesn't thicken enough, I'll try adding just a light sprinkling of flour the time after that. I served this with rice and vegetables.

Whole Wheat Blueberry Muffins

Strawberry Pie II

Delicious! I had a deep dish pie crust, so I increased the strawberries to fill the pie (but I kept the other ingredient quantities the same). I used about 3/4 of the strawberries whole in the pie and mashed the other 1/4 of the strawberries. Instead of following the directions as written, I mixed the mashed strawberries, sugar, cornstarch, and water in a saucepan and stirred until it boiled, then stirred for a minute or two more until it thickened. I made two pies and tried pouring the sauce over the berries in the first pie, but it was too thick and it didn't fill in the gaps, so I had to move the berries around to get the sauce to mix into the pie. With the second pie, I mixed the whole strawberries into the sauce in the pan and poured that mixture into the crust, which was easier. I "painted" the inside of the second crust with melted chocolate and let it set (as suggested by other reviewers) before adding the strawberries. It was good with the chocolate, but I think I preferred the pie without chocolate. I didn't try topping the pie with whipped cream because it was so wonderful that it didn't need it. I made the pies in the early afternoon and they were set by the evening. I think this pie will become an annual favorite when U-pick strawberries are in season.

Stewed Cabbage

This was fine, but I thought it needed more flavor. I wound up putting salad dressing on some of it and I liked it better that way, although it wasn't terrible on its own. It's not good enough for me to make again. The reviewers who added bacon were on the right track, I think, because that would probably make this much better.

Strawberry Oatmeal Breakfast Smoothie

I didn't like this much when I first tasted it, but it grew on me. I don't know if I'll make it again. It was fairly bland (but some people would like that, and I expected it from the ingredients). The oatmeal didn't grind up very well. I think the instructions should tell people to blend the oatmeal first and then add the other ingredients.

Southwestern Egg Rolls

This is extremely popular with my family. It's one of the few ways I can get my picky toddler to eat veggies! I use the ingredients called for in the recipe, but I'm very flexible with the quantities. I just throw everything together and heat it up. I use either egg roll wrappers or tortillas, depending on what I have on hand, and I spray the egg rolls with cooking spray and bake them at 450 until they're lightly browned. I don't freeze them first. I serve the egg rolls with Amy's Cilantro Cream Sauce for dipping.

Cowboy Skillet Casserole

This was not popular with my family. Everyone ate some of it, but we had a lot left over, which wouldn't normally happen with that quantity of food. The main upside of this recipe is that it's easy to prepare, but I won't make it again. My husband wants me to try modifying the meat portion to make it less sweet (maybe a can of chili instead of a can of baked beans), but I don't think I like the recipe enough to try to modify it to our tastes.

Peanut Butter Brownie Bites

I ran into trouble making this recipe because the ingredient list is a little confusing. Most of the ingredients are listed twice if they're used twice, but the sugar is not. I wish the recipe listed 1 cup sugar twice in the ingredient list. I accidentally used the full amount of sugar in the bottom layer instead of just half of it. However, the brownie bites were good despite that mistake. I liked them better after storing them covered for a couple of days, because they softened. They were very crumbly, which made them a little hard to eat.

Slow-Cooker Lasagna

This tastes good, but the consistency of the noodles is unappealing. I don't think I'll make this again. It's easier than traditional lasagna, but it's not worth the sacrifice in texture.

Roasted Pears with Caramel Sauce

This was a delicious and easy way to use a pear surplus. I didn't peel the pears, and it's not necessary, although I suppose some people might prefer them peeled. If you use very ripe pears, they won't need as much caramel as this recipe makes because they'll already be super sweet. Less ripe pears will be firmer after baking. Some reviewers said they shortened the baking time because their pears were already so ripe, but when I tried this, the caramel didn't get thick enough. I tried eating the pears with vanilla ice cream, but I liked it better with sour cream and nuts (I used almonds) as suggested by the recipe. It's rare that I like a recipe best as written, but this is one of those times!

Spinach Basil Pesto

Fantastic! Because of the price of pine nuts, I used half almonds, and this turned out great. I got about 1.5 cups out of this recipe (I was wondering how much "12 frozen cubes" would turn out to be). It's nice to be able to serve spinach to my husband without having to hide it.

Pesto Cheesy Chicken Rolls

This tasted good, but it didn't look as nice as I had hoped. Why does the recipe call for a cup of pesto when you won't use that much if you follow the directions? Next time, I think I'll just top the breasts with pesto and cheese and not bother rolling them up.

Banana Pancakes I

Delicious! I used whole wheat flour and turned the heat down a bit after the first pancakes were getting done on the outside before the inside was ready. I may try adding vanilla next time because so many reviewers liked it that way, but it was good without. These pancakes have quite a bit of banana flavor and they're nicely sweet even without syrup.

Black Bean Brownies

These are good considering that they have beans instead of flour. But they don't taste as good as your standard (less healthy) brownie. I'm not sure the nutritional profile is good enough to make these worth making again. I'd usually prefer a smaller portion of a more decadent treat than a slightly larger portion of this. I should mention that I didn't use the coffee, which might have improved the flavor. I couldn't taste the beans even without the addition of coffee.

Easy Mexican Casserole

This turned out a little too runny for me. I don't think it was supposed to be that way, so I may have needed to simmer the meat mixture longer or use a thicker salsa or sour cream. It tasted delicious, but the chips on the bottom were totally soggy and hardly noticeable in the mixture. Next time I may leave the chips out of the recipe and just serve with them on the side. It makes a great dip or chip topping. I added a little garlic and taco seasoning to the meat mixture, and it was very flavorful. I used ground turkey and light sour cream, but I'm still not thrilled with the fat content of this recipe. I also used canned diced tomatoes with chilis instead of fresh tomato, but I think it would be good either way.

Lentils and Rice with Fried Onions (Mujadarrah)

This is a delicious and nutritious dish. My reason for giving it four stars instead of five is that I think it needs a lot more onion and that the onion should be cooked longer. I prefer about four medium onions, cooked until they're caramelized. I sometimes add other spices, like chicken bouillon, cumin, and cinnamon, but those aren't really necessary. The yogurt is necessary, though! Don't skip it just because the recipe says it's optional.

Award Winning Soft Chocolate Chip Cookies

I was tempted to give this five stars because it is a very good recipe. However, I think I prefer the taste of the classic chocolate chip cookie recipe, without the pudding mix. The thing I love about this recipe is that the cookies always turn out looking perfect, they stay soft, and they don't flatten in the oven. This makes this recipe very handy when you're going to take cookies to an event where you want them to look nice! But when I make cookies just for my family at home, I'll skip the pudding mix.

Dill Pickle Meatloaf

In my family, we're not big fans of meatloaf. I thought the dill pickles were great in this, though. My husband, who doesn't like pickles, scraped off the pickles and thought it was fine.
