Black Bean Brownies
These are good considering that they have beans instead of flour. But they don't taste as good as your standard (less healthy) brownie. I'm not sure the nutritional profile is good enough to make these worth making again. I'd usually prefer a smaller portion of a more decadent treat than a slightly larger portion of this. I should mention that I didn't use the coffee, which might have improved the flavor. I couldn't taste the beans even without the addition of coffee.

Easy Mexican Casserole
This turned out a little too runny for me. I don't think it was supposed to be that way, so I may have needed to simmer the meat mixture longer or use a thicker salsa or sour cream. It tasted delicious, but the chips on the bottom were totally soggy and hardly noticeable in the mixture. Next time I may leave the chips out of the recipe and just serve with them on the side. It makes a great dip or chip topping. I added a little garlic and taco seasoning to the meat mixture, and it was very flavorful. I used ground turkey and light sour cream, but I'm still not thrilled with the fat content of this recipe. I also used canned diced tomatoes with chilis instead of fresh tomato, but I think it would be good either way.

Lentils and Rice with Fried Onions (Mujadarrah)
This is a delicious and nutritious dish. My reason for giving it four stars instead of five is that I think it needs a lot more onion and that the onion should be cooked longer. I prefer about four medium onions, cooked until they're caramelized. I sometimes add other spices, like chicken bouillon, cumin, and cinnamon, but those aren't really necessary. The yogurt is necessary, though! Don't skip it just because the recipe says it's optional.
