Jalapeno Bacon Cheddar Deviled Eggs

I've made this twice so far - they are better than regular deviled eggs. I have farm fresh eggs and am always looking for a way to use them. I did 18 of them with 3 large jalapenos, increasing the other ingredients by 50% I used lite mayo and regular yellow mustard & paprika, skipping the onion. Took them to a potluck and they were gone in a flash.

Tomatillo Soup

Put everything in the crockpot the night before except for the chicken. Added 2 large boneless chicken breasts in the am. Looked weird when I got home - took a stick blender to it. Shredded the chicken and put it back. Added hot sauce, cumin, 1 can or rinsed black beans and about a cup of frozen corn. Was out of cilantro and sour cream, served over crushed fritos and topped with shredded cheese - 12 year old son asked for 2nds! Husband asked for 2nds - glad to have something to do with the tomatillo's. They were volunteers from last year when I didn't know what to do with them and left them out to rot!

Garden Fresh Tomato Soup

wonderful - followed some other suggestions and made a few of my own. Used about 12 cups of fresh garden tomatos, added 1 jalapeno, a handful of basil, 2 onions, 2 tablespoons chopped garlic, 4 cups of chicken broth, 2 teaspoons of salt - a good dash of black pepper, 4 teaspoons of raw sugar, 2 tablespoons of balsamic vinegar. made the roux with 4 tablespons butter and 4 tablespoons flourc added a cup of sour cream at the end. served with grilled cheese on pumpernickle/rye bread with bacon.

Mom's Zucchini Pie

used some of the other suggestions. used a 9x13 pan - spread yellow mustard on the crescent rolls. Used 2 medium to large zucchinis, about 11/2 cups ricatta, 3 small eggs, about 11/2 cups cheddar cheese, added about 1/2 pound bacon and a fresh garden tomato. To die for!! baked for 30 minutes

Curried Zucchini Soup

White Chili with Ground Turkey

great flavor!!! I don't really like ground turkey and prefer ground chicken - but this was awesome. I had a 1 lb pack of turkey - so scaled it down to 5 portions. Increased the cumin and oregano to 2 teaspoons - used 2 cups of chicken broth, 2 fresh jalapenos, 1/2 teaspoon of cinnamon. Added the cayanne and white pepper to taste. Added some cilantro at the end, put the cheese on top instead of in with a little sour cream. Served over crushed tortillo chips.

Shepherd's Pie VI

I doubled the recipe, using both beef broth and 1 pack of gravy mix with 1 cup of water. I seasoned the meat with salt,pepper,onion powder,garlic powder and a dash of worcestershire. I put the meat on the bottom of the pan, sprinkled a layer of frozen peas on top - then a layer of mashed carrots (10), then topped with the seasoned mashed potatos, then sprinkled with cheese. My husband said he could eat this once a week!! Everyone had seconds.

Penne Pasta with Spinach and Bacon

This was pretty good. I cooked a 1/2 pound of bacon, then drained the grease and fried an onion and 2 cloves of garlic. I added a bag of baby spinach, a 1/2 teaspoon of basil, a can of diced tomatos with jalapenos and a little half & half. Then I put it in the pot with the pasta. Sprinkle a little parmesan when serving.
