this rocks. I subbed 1/2 c. unsweetened applesauce for 1/2 c oil, and subbed in 1 c. brown sugar, and reduced total sugar by 1/2 c. I also used fresh grated nutmeg and was generous w the spices except for ginger and cloves. right out of the oven, I thought it was not quite sweet enough, but the second day the flavor really is better, and definitely sweet enough. I was dreaming of a whipped honey butter though. :) I baked it in my two loaf pans - one is just under 5x9 and the other is just over. both came out great. small one was done in 55 min, larger was closer to 65-70.
