Oven Pot Roast

Reviewed: Apr. 5, 2013
OK, This was seriously amazing! The 'sauce' is what makes this pot roast stand apart from all the others I have made the last 20 years of my trial and error cooking adventures. the only thing I would do different the next time I make this (and I will be making this again and again) is that I will triple the sauce. Aside from that, this was the best pot roast we have ever had and by far the best I have ever made. My hubby and kids (picky eaters, ages 14, 8 and 6) absolutely loved it and wanted more 'gravy' but we were scraping the bowl clean (read to mean 'LICKING' the plates, lol) I made no changes at all, aside from adding new potatoes, carrots and a sliced onion the last hour of cooking time. The only thing I will change for next time is that I will double or triple the sauce recipe. I will probably be coming up with different ways to add this sauce to other meat recipes. It tasted amazing over roasted potatoes.

Tzatziki Sauce I

Reviewed: Mar. 4, 2013
My husband was raised on Tzatziki sauce, so he is pretty picky and likes it authentic tasting. I followed this recipe to a TEE and he loved it. my kids loved it too. I served it with broiled marinated Chicken ( my chicken had a slight 'kick' to it, so this sauce was a perfect pairing ) I used pizza dough and baked it on my griddle at 450 degrees instead of the usual pita bread. This dinner was a hit. I will make this recipe every time!

Easy Vodka Sauce

Reviewed: Feb. 21, 2013
LOVE this recipe. so easy to make. I tweak it to make it a bit more calorie friendly. I use a tbl of olive oil instead of butter. I add a shallot, red onion, fresh rosemary and dried sage as well as minced garlic to the olive oil. I also add whatever 'marinara' sauce I happen to have on hand plus organic diced tomatoes. I add fat free half and half instead of the cream. Always delicious! A keeper.

Curried Coconut Chicken

Reviewed: Jan. 10, 2013
this is a staple meal in our home now. I have made it several times and every time it turns out delicious. simple and easy to make. I only make one change, I omit the sugar and add honey as the sweetener for added health benefits. I have used this sauce over fish as well as veggies, not just chicken. Thank you to roma for submitting a winner!

Sour Cream Chicken Enchiladas

Reviewed: Dec. 6, 2012
I made two huge casseroles of this; one for my family and one for our neighbor who just had surgery. It was so easy and such a hit. My kids loved it, as did me and my hubby. My neighbor had never had sour cream enchiladas before and both her and husband loved it too. It was quick and easy to make. A keeper.

Pumpkin Dessert

Reviewed: Dec. 6, 2012
easy and delicious recipe. I followed the recipe to a tee, used canned pumpkin and added my own spices individually, because I ran out of a pumpkin pie spice. I agree with the other reviewers about it being on the sweet side, but I personally prefer my desserts to be a bit rich, (that way I feel satisfied with a bit less). If you are not into the sweet stuff, use less sugar. Using both the cake mix in addition to the white and brown sugars tends to lend a sweeter mixture. I took this to a gathering and one friend of ours actually had three huge pieces. everyone said they enjoyed it and I personally LOVED it. I will make this again every year. It is now a staple for my Fall desserts.

Chicken with Chipotle

Reviewed: Dec. 24, 2010
This was very good! easy to make and delicious. I did not change a thing - made it exactly as recipe indicates. The only thing I would do different next time is add more chipotle's. I have a house full of gringo's and I need a little more kick. ~!

Salsa Chicken Burrito Filling

Reviewed: Dec. 24, 2010
I made this last night with left over roasted chicken - which I shredded and simmered in the sauce. I did not have tomato sauce on hand, so I used tomato and red pepper soup (Trader Joes brand) instead. it was most excellent. The entire family raved about this 'chicken! We made wet burritos with the sauce, and served it with chipotle salsa and sour cream. definitely my new 'go to' chicken burrito filling :)

Clone of a Cinnabon

Reviewed: Oct. 7, 2010
These are excellent. very 'doughy' if that is what you like, which we do...I used my Kitchen Aid mixer to knead the dough, it was so easy. My family loved these rolls. I honestly do not think they are 'like' Cinnabon to a "T", but they are delicious in their own right. The frosting IMO was not what I expected, but it could have been my own mistake, don't get me wrong, it was still yummy, I just felt it was missing something I cannot put my finger on. Over all, a really good cinnamon roll. Oh yeah, I left it in my oven over night to rise, and I got a great sized cinnamon roll for baking. I was planning on turning them over after baking (as other reviewers advised), so as to utilize the butter/sugar drippings to their best, but my husband beat me to getting these puppies out of the oven, and the kids cut into them right then and there. There was NO complaining from them about the gooey goodness ending up at the bottom of the pan...I don't think they even noticed. These are at their prime straight from the oven....but the next day they still were gloriously gooey and tender, not dry like I expected.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Reviewed: Oct. 7, 2010
I made this using a bag of black beans that I slow cooked, (not from a can). I did not have the bell peppers, but this was still a very good chili. I also used a pork roast - a cheaper cut, since this was to be slow cooked (save yourself some money and purchase a cheaper cut, it will still come out just as good and tender). I actually slow cooked the pork roast the previous day for BBQ pork sands, and I saved half of that pork (minus the BBQ sauce) and used the left-over's for this chili by adding it the last 30 minutes of the cooking time. This chili was amazing, and easy peasy. I have a family of 6 and big eaters, but because I used a bag of black beans, and a cheaper cut of pork this chili is super easy on your budget, especially if you need to feed a crowd. We had more than enough to freeze for another meal - which even further stretches your grocery budget. This chili is very economical and I LOVE that! I served this with "Grandmothers Buttermilk Cornbread", and I will more than likely use the rest of this left over chili in burritos for our next meal.

Grandmother's Buttermilk Cornbread

Reviewed: Oct. 7, 2010
If you like dense cornbread like me, this is the ticket! I did not have buttermilk on hand, so I improvised by adding 2 Tbls of fresh lemon juice to one cup of low fat milk- and let that sit for about 10 minutes. It came out perfect. It is a dense cornbread as I said before, and because of that it was very filling. I doubled the batch and have one in the freezer for a future dinner, and I am so happy I did, because this now my 'go to' recipe for cornbread from now on. I served it with pork and black bean chili and it was a huge hit with everyone. (very picky eaters I might add). LOVE THIS recipe!

Creamy Buttercream Frosting

Reviewed: Aug. 20, 2010
I am pretty sure I followed this recipe exact, but it did not work out for me. It had a runny consistency during the mixing process, but I told myself it would firm up after chilling. I was wrong. These were suppose to frost my daughters birthday cupcakes. The frosting (as the chill wore off) became runny. A disappointment. I won't be using this recipe again.

Creamed Eggs on Toast

Reviewed: Apr. 4, 2010
These were yummy. I used less egg yolks than what was called for and they still tasted very good. I used toasted rolls since I was low on sliced bread and they were excellent. I will make these again and next time I was thinking I will use to buttermilk biscuits. Hubby and kids LOVED these. a great way to use up hard boiled left over easter eggs :)

Asian Coleslaw-redone

Reviewed: Mar. 26, 2010
The flavors work perfectly together. I did not have splenda on hand, so I used honey instead. I forgot to add the cilantro, but it still turned out great. I added this to store bought 'coleslaw' in the bag and it was super easy. Everyone LOVED this salad, including my very picky 3 year old. Will be making this again over and over.
