Chicken with Chipotle

This was very good! easy to make and delicious. I did not change a thing - made it exactly as recipe indicates. The only thing I would do different next time is add more chipotle's. I have a house full of gringo's and I need a little more kick. ~!

Salsa Chicken Burrito Filling

I made this last night with left over roasted chicken - which I shredded and simmered in the sauce. I did not have tomato sauce on hand, so I used tomato and red pepper soup (Trader Joes brand) instead. it was most excellent. The entire family raved about this 'chicken! We made wet burritos with the sauce, and served it with chipotle salsa and sour cream. definitely my new 'go to' chicken burrito filling :)

Clone of a Cinnabon

These are excellent. very 'doughy' if that is what you like, which we do...I used my Kitchen Aid mixer to knead the dough, it was so easy. My family loved these rolls. I honestly do not think they are 'like' Cinnabon to a "T", but they are delicious in their own right. The frosting IMO was not what I expected, but it could have been my own mistake, don't get me wrong, it was still yummy, I just felt it was missing something I cannot put my finger on. Over all, a really good cinnamon roll. Oh yeah, I left it in my oven over night to rise, and I got a great sized cinnamon roll for baking. I was planning on turning them over after baking (as other reviewers advised), so as to utilize the butter/sugar drippings to their best, but my husband beat me to getting these puppies out of the oven, and the kids cut into them right then and there. There was NO complaining from them about the gooey goodness ending up at the bottom of the pan...I don't think they even noticed. These are at their prime straight from the oven....but the next day they still were gloriously gooey and tender, not dry like I expected.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

I made this using a bag of black beans that I slow cooked, (not from a can). I did not have the bell peppers, but this was still a very good chili. I also used a pork roast - a cheaper cut, since this was to be slow cooked (save yourself some money and purchase a cheaper cut, it will still come out just as good and tender). I actually slow cooked the pork roast the previous day for BBQ pork sands, and I saved half of that pork (minus the BBQ sauce) and used the left-over's for this chili by adding it the last 30 minutes of the cooking time. This chili was amazing, and easy peasy. I have a family of 6 and big eaters, but because I used a bag of black beans, and a cheaper cut of pork this chili is super easy on your budget, especially if you need to feed a crowd. We had more than enough to freeze for another meal - which even further stretches your grocery budget. This chili is very economical and I LOVE that! I served this with "Grandmothers Buttermilk Cornbread", and I will more than likely use the rest of this left over chili in burritos for our next meal.

Grandmother's Buttermilk Cornbread

If you like dense cornbread like me, this is the ticket! I did not have buttermilk on hand, so I improvised by adding 2 Tbls of fresh lemon juice to one cup of low fat milk- and let that sit for about 10 minutes. It came out perfect. It is a dense cornbread as I said before, and because of that it was very filling. I doubled the batch and have one in the freezer for a future dinner, and I am so happy I did, because this now my 'go to' recipe for cornbread from now on. I served it with pork and black bean chili and it was a huge hit with everyone. (very picky eaters I might add). LOVE THIS recipe!

Creamy Buttercream Frosting

I am pretty sure I followed this recipe exact, but it did not work out for me. It had a runny consistency during the mixing process, but I told myself it would firm up after chilling. I was wrong. These were suppose to frost my daughters birthday cupcakes. The frosting (as the chill wore off) became runny. A disappointment. I won't be using this recipe again.

Creamed Eggs on Toast

These were yummy. I used less egg yolks than what was called for and they still tasted very good. I used toasted rolls since I was low on sliced bread and they were excellent. I will make these again and next time I was thinking I will use to buttermilk biscuits. Hubby and kids LOVED these. a great way to use up hard boiled left over easter eggs :)

Corned Beef and Cabbage

I have never made corned beef before, but wanted to try it this year...so glad i did...my husband LOVED it and so did my kids, all of them! 3, 5 and 11, and very picky eaters. it was so easy to make, and turned out perfect. I did not have a bay leaf, but it did not seem to matter. turned out great.

Asian Coleslaw-redone

The flavors work perfectly together. I did not have splenda on hand, so I used honey instead. I forgot to add the cilantro, but it still turned out great. I added this to store bought 'coleslaw' in the bag and it was super easy. Everyone LOVED this salad, including my very picky 3 year old. Will be making this again over and over.

Buttermilk Pancakes II

sorry, i followed this recipe to the T and these pancakes turned out with no flavor whatsoever. They were light and fluffy and a great consistency, but they were very very bland. even my 4 yr old said they 'had no taste'....sorry. wish i could give a better rating.

Slow Cooker Chicken and Dumplings

Grandma Johnson's Scones

I LOVE scones. I have been making them for about 13 yrs now....however, i have been searching for that perfect recipe. i like my scones dense, rich and moist. i have tried EVERYTHING to get them that way....NOW i know what I was missing! this recipe. it is the BEST scone i have ever made! i cannot wait to make these again !! every scone loving friend i have begged for the recipe...teehee....and i wouldn't give it to them....! (allrecipes is my little secret) it's just that good!
