Becky's Baked Oatmeal

My husband and I have enjoyed eating this baked oatmeal all week. I used canola oil instead of flax and I added an extra banana. Lovely texture. We eat it warm with milk poured over top. We'll be making this regularly.

Baked Oatmeal II

My husband enjoys this as a late night snack before bedtime. It's healthier than other snacks and is easy for him to warm up. I used coconut milk in my batch because I was using up items in the pantry.

Panna Cotta

Home-style Tacos al Pastor (Chile and Pineapple Pork Tacos)

Popped the whole recipe in the slow cooker after making the sauce as per the recipe. Cooked on low for 8 hours and it was fabulous! Fall apart tender and everyone loved the little "street" tacos we served.

Spaghetti Carbonara II

My family enjoyed this for Christmas Eve lunch. I added peas and mushrooms to make it a little heartier. I also cooked some pancetta with the bacon. Because I added the mushrooms and peas, I need to add a little more salt. Yum!

Cranberry Orange Tea Bread

I'm a huge fan of orange and cranberry together. My aunt got me started on this flavor combination about 20 years ago and I always made an orange and cranberry bread while helping her cook and bake for the holidays. I chose this recipe in remembrance of her. Easy to make, great flavor and good texture.

Big Soft Ginger Cookies

Caramel Apple Cider with Salty-Sweet Rim

What an incredible fall treat! I rimmed my mug with honey, brown sugar and flaky sea salt. I also used an unfiltered honey crisp apple cider. I plan to use this recipe throughout the fall and winter for a warm pick me up! I heated my cider in the microwave and omitted the apple pie spice as we are out of it.

Copycat Lawry's® Seasoned Salt

Made this tonight when a friend was out of Lawry's seasoned salt. She was out of turmeric so we did not include it. The blend was a bit salty but worked perfectly!

Sausage Mushroom Pizza

I used a store-bought whole wheat crust for these pizzas (it made three small pizza). I also substituted breakfast sausage for Italian sausage. I used two different cheese blends (Italian and a three-cheese blend). I added diced onions to our pizza. I used crimini and white button mushrooms. I wanted to grill the pizza but the foil burned up on the grill before I cooked the crust so I baked the pizzas instead.

Salted Caramel Nut Brittle

The brittle cooks up to a beautiful golden color. Make sure that you sprinkle on your nuts and seeds while the brittle is still hot. I waited two minutes as recommended in the recipe and the brittle was already hardening and the nuts and seeds would not stick. I did have to heat the brittle in the oven so my toppings had a chance to stick. I didn't use pumpkin seeds as we do not care for them. I also sprinkled some Maldon salt on the brittle as I did not think the saltiness of the nuts would come through enough to call this salted caramel brittle. I did use Reynolds non-stick foil and I was surprised that the brittle did not stick. It came off easier than with parchment.
