I baked a carrot cake for Easter 2010. The cream cheese frosting was too soft and the temperature outside was too warm, so the layers played slip and slide in my cake taker! It was edible, just not pretty!

Peanut Butter Pie I
I cheated and used a store-bought chocolate cookie crust. The peanut butter portion of my filling didn't get smooth even after 5-7 minutes in the stand mixer. Adding the whipped cream helped even out the texture. Filling tastes great! I garnished it with mini peanut butter cups cut in half.

Salsa De Tomatillo
So good! I'm a huge fan of tomatillo salsa. This recipe is easy and tastes great. Next time, I plan to roast the tomatillos.

Lime-Cilantro Vinaigrette
