We had our first experience with bison meat this past week. We received free bison bacon from the Bison Council. I made a risotto dish with bison bacon and asparagus! The risotto was so creamy and flavorful (make sure you add the liquid slowly and not all at once). It was smoky, salty and cheesy.
If you've not had bison, you should give it a try! It's the other "red" meat.

I baked a carrot cake for Easter 2010. The cream cheese frosting was too soft and the temperature outside was too warm, so the layers played slip and slide in my cake taker! It was edible, just not pretty!
