Black Bean and Corn Quesadillas

This recipe was delicious! A little sweet but when it's topped with spicy salsa it's perfect. My meat loving husband was very skeptical but after giving a try he loved them. I will be making this again

Delicious Pineapple Muffins

Maybe it was me or maybe the recipe, but mine didn't turn out. I even added fresh pineapple to the batter in addition to the juice. Looked yummy, but not much flavor . . .

Rice and Lentil Pilaf

Really tasty. I used brown rice also, so it took almost an hour to cook. The lentils got a little mushy, but everyone who tasted it liked it. I will be making this again. Great way to eat lentils.

Carrot Ring

Greek Style Garlic Chicken Breast

Delicious! I also used half of the oil and left out the paprika but added basil. I broiled it for about 12 min and it turned out moist and tender. Thanks for sharing.

Corn Fritters

Delicious. Everyone loved these. We ate some plain and put powdered sugar on the rest. I only did one thing different. After I cooked FROZEN corn I processed it in the blender for a few minutes to make it almost a puree with a few kernels. Perfect.

Quick Peanut Butter Cookies

Super Rich!! Turned out perfect. I needed to bake mine for about 10 min, but they were just a tiny bit bigger than 1 inch. I was only able to make about 32 cookies. Not a huge hit at my house, but a good cookie none-the-less.
