California Casserole

Reviewed: Apr. 15, 2011
This is a very good base for a casserole. I did change it to suit our tastes more, so I can only give it 3 stars, but if I could give it 3.5, it would be closer to that. I found it definitely needed meat of some kind. I've taken chicken or pork and sauteed in either fajita seasoning or adobe seasoning and layered it into the casserole. I've also sprinkled extra seasoning onto the casserole to give it a touch more flavor. After the second time making it exactly as specified, I tried adding more seasoning, and it definitely rounded out the creaminess of the sour cream/cheese. I probably only use ~2 cups shredded cheese, and that is plenty. My husband, LOVES, LOVES this casserole. Definitely one of his favorites, I feel it needs a touch more "oomph" - obtained by extra seasonings.

Best Ever Blueberry Cobbler

Reviewed: Apr. 15, 2011
I'll give it 4 stars because I modified it slightly - followed others' lead and added a touch of cinnamon to the berry mixture. I had to get rid of a roll of sugar cookie dough, so I added disks of sugar cookie dough to the last 15 minutes of baking. Delicious berry mixture - will definitely make again! I ended up using a total of 3 cups mixed blueberries, blackberries, and raspberries to use up fruit my kids said they were going to eat, but didn't.

Rice and Chicken Casserole

Reviewed: Apr. 11, 2010
When I read this recipe, I thought what could be bad about all of these? I read several of the reviews, I needed a "bland-ish" dish for my husband this week to help calm some reflux issues - I thought this would work. I did 1/2 wine, 1/2 milk instead of 1-1/2 cans milk; I cooked covered 1 hour at 350, then uncovered for 1/2 hour. I stirred in some cheese, I used skinless boneless chicken instead. And, I only used 1 T the onion mix. I am well beyond a novice cook, but to make something quick, with what I had on hand, and minimal effort this evening, I gave this a shot. I mixed everything very well, even brought out a wisk. I used a Le Crueset buffet casserole dish instead of the 9x13, but surface area is about the same. Parts of the rice was gooey, part was dry, chicken was fine - my 3 year old LOVED it. Rice tasted like cream of mushroom soup with a touch of onion soup with a touch of wine. No subtle flavor, just convenience factor. It wasn't bad, but as others said, perhaps with cutting down the onion MORE than 1/2 packet (I used 1 T total), maybe adding different spices, it has potential for a "I don't know what else to make for dinner, but I've got all these ingredients"-dinner. My non-picky husband suggested I don't need to make this one again.

Slow-Cooked Country Ribs in Gravy

Reviewed: Dec. 26, 2008
Ok. Flavor was fine, but nothing great. I followed the instructions exactly - my ribs turned out just a tad too dry, which was odd given the wateriness of the sauce. i was hoping for more of a stick-to-the-ribs kind of sauce. I wouldn't discourage anyone from trying it, I won't necessarily use this recipe again - still looking for a "Great" rib slow-cooker recipe.

Apple Butter Pork Loin

Got rave reviews from my husband - who doesn't like pork too much. I don't like port that much either, and I loved it.

Cocoa Oatmeal Cookies

Reviewed: Sep. 2, 2008
I found these to only be so-so. I followed the recipe EXACTLY, found them a tad dry ... perhaps too much oatmeal? I thought the batter all the way up to adding the oatmeal (the chocolate base) was delightful, so I was dissapointed that they didn't taste great. I baked 2 trays, waited to people to eat them, had very mediocre responses to this recipe. I'll keep looking for a better oatmeal cookie recipe. Gave it 3 stars because the batter up until the oatmeal addition is really good.

Marie's Easy Slow Cooker Pot Roast

Reviewed: Nov. 6, 2006
Easy, tasty. I've made multiple times for pot-roast loving husband. Tastes just as fine not browning first. At suggestion of another reviewer, I add about 1-2 Tb Montreal Steak Seasoning to give it a little extra punch. Also used 1.5 lb roast with same proportions - no problem. Great recipe!
