About this Cook
I'm a full time mom who loves to experiment, even if my family isn't as impressed as I am. I have a tendency to tweak things, but my DH always says, "why can't you just make it like the last time?" I'm also "recreational baker" meaning I like to bake for the sake of baking, just so I can taste something.
My favorite things to cook
My husband and I like to cook chicken tacos. We call it "Taco Tuesdays - on Wednesday".
My cooking triumphs
I was craving paella so I gathered a bunch of recipes and took the parts that I liked. When it was all done, I had 3 seven-year-olds begging for more. I attempted to make a gluten-free pineapple upside down cake. I used a standard recipe, but the cake was not baking the way I was hoping. After cooling it and realizing it was still raw, I put it back in the oven 2 more times. By the time it was finally ready to eat, it had fallen apart and wasn't very pretty to look at, but it tasted amazing.
My cooking tragedies
As far as I know, I've never made anyone sick. I have officially given up trying to cook chicken. Whole chickens are my Achilles heel. It never fails. When I go to cut it up, it's always pink and rubbery inside. I've tried 20 different cooking methods from baking to rotisserie to grilling and I just don't have it.

Roast Sticky Chicken-Rotisserie Style
Amazing and so easy. 10 stars. I used a best-of-fryer and it cooked in 2 hours. Basted every 30 minutes with pan juices. Wow. DH says it's better than any store-bought rotisserie chicken.

E-Z Drop Biscuits
EZ? Y-E-S! I did a test batch using 1/4 recipe. I even added 1 tsp flax meal to the flour and the flavor and texture were perfect. I did not use the tartar, because I do not prefer the flavor it adds and I noticed no ill effects. These will make a wonderful, portable breakfast in the morning.

Sausage Casserole
This was a huge hit. I would like to try to make a few in smaller loaf pans for everyday breakfast. I made this along side a french toast casserole and it was a wonderful savory complement to the sweet. I will definitely make this again.
