Ground Beef Shepherd's Pie

Reviewed: Dec. 18, 2002
This a very good and quick recipe - easy to adapt if you don't have the specific ingredients that it calls for. I, like other reviewers, added some extras: salt, pepper, worcesteshire sauce and extra veggies. I didn't have any potatoes on hand, so I used a 4-serving portion of instant mashed potatoes. My kids haven't eaten anything like this before and they loved it.

Holiday Mini Kisses Treasure Cookies

Reviewed: Dec. 17, 2002
These are awesome. Quick and very easy to make. I found they needed to be baked a little longer than 8-10 minutes, though - more like 10-12 minutes.

Ham and Chicken Casserole

Reviewed: Dec. 12, 2002
I, like other reviewers, thought that this served only 2 portions (if even that). The only modification I made was using celery seed instead of chopped celery (I didn't have any). My two girls loved this (I can't eat it because of my diet), but I tried a small bite and found it very tasty. This recipe is good as is, or would be a great base to add other ingredients.

Best Italian Sausage Soup

Reviewed: Nov. 7, 2002
This soup is unbelievable. I'm not a big soup fan, but it sounded like it'd be different and tasty - and it is. My 10 and 11 year olds had seconds and thirds (they didn't care for the zucchini - but they're kids!) Like some other reviewers, I thought there wasn't quite enough liquid, so I added about one more cup of beef broth and about 1/4 cup more of wine - just right for our taste. I also didn't use fettucine - thought it would be hard to consume in a soup, so instead I used spinach penne pasta - it was perfect. I made plenty so I gave some to neighbors and they all loved it. Thanks for the recipe.

Chicken Pot Pie V

Reviewed: Sep. 17, 2002
This did take longer than what I expected, but the results were excellent. I also found that the recipe made more than 4 servings, - more like 6 servings. I was lazy and didn't want to go through the trouble of making the crust, so I bought a package of refrigerated pie crusts and used one for the bottom and one for the top. It turned out great!

Baked Beans, Texas Ranger

Reviewed: Aug. 28, 2002
I thought this was just ok. For my tastes, it was too sweet - but the rest of my family liked it. They'd give the recipe a 4-star rating. If I were to change anything, I'd use more beans and less brown sugar and maybe a little more worcestershire sauce. The onion, bell pepper and sausage were a good addition.

Mexican Cream Cheese Rollups

Reviewed: Aug. 19, 2002
This is great. I was slightly unsure about the green olives, thinking they might overpower the recipe, but I followed the directions exactly and the rollups came out wonderful. I took these to a get-together and they were a hit.

Cheesy Meatloaf

Reviewed: May 30, 2002
Wonderful recipe. Everyone loved it - I even liked it and I don't like meatloaf. Because my husband and I are on low-carb diets, I substituted the bread crumbs for some crushed pork rinds (only about 3/4 cup). I also didn't have enough mozerella on hand, so I mixed the mozerella with some shredded cheddar I had - was fantastic!

Broccoli and Cheese Brunch Casserole

Reviewed: May 13, 2002
Loved this recipe...so did everyone else. The only discrepancy was that it took much longer than 45 minutes to cook...closer to an hour and a half. Worth the wait!

Beef Marinade I

Reviewed: Apr. 23, 2002
This marinade was excellent. Like some of the others, I didn't add any salt since I thought the soy sauce was enough and it was plenty salty. I used it for shish kabobs and marinated for 24 hours and it was fantastic.

No Time to Cook Chicken

Reviewed: Apr. 16, 2002
This was wonderful. I only had a whole roasting chicken and no cream of celery soup, so I added cream of mushroom instead and added a little celery seed seasoning to it. The whole roasting chicken made it greasy, but I just poured the grease off, mixed in the sour cream and it was delicious. My kids asked me to definitely make it again-they LOVED the gravy it made and put it over mashed spuds.

Cavatini I

Excellent recipe - it took a while to make, so I made double and froze the extra. I agree with another reviewer in that it tastes even better when the flavors had time to meld.

Arroz con Pollo (Chicken with Rice)

Reviewed: Jan. 24, 2002
This was a big hit. I only used about 18 ounces of salsa (that's all I had) and it turned out great - any more than that might be too much on the tomatoes. Kids loved it.

Double Layer Pumpkin Cheesecake

Three words...quick, easy, and yummy. As one of the other reviewers stated, this dessert was the first to go. It was fantastic. Definately a keeper.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 26, 2001
I'm not a big fan of stuffing, but this was very good. I used pork sausage (couldn't find turkey sausage) and it turned out great. I received a lot of compliments this Thanksgiving when I served it.

Grandma's Green Bean Casserole

I served this for the first time (without even trying the recipe first) this Thanksgiving. It was GREAT! It was the only dish that we didn't have any leftovers - everyone loved it.
