Sangria! Sangria!

We currently live in Spain... and this is goooood and similar to what you can find here. Very close to the real deal. We followed everything pretty closely. We did not have triple sec, so we omitted that. We DID add the carbonated water (1 full can) and white sugar to taste. Probably 1/4 cup??? Lastly... it needed a little extra something so we added a guzzle of tom collins mix (since it was in the fridge) BUT it would have been good without it! YUMMO

Sausage-Stuffed Mushrooms

My husband loved these. Used spicy italian sausage. Did a can of tomato sauce and added italian seasoning and garlic salt. mixed mozz and a little parm cheese into stuffing mixture. Also added a couple tablespoons of italian breadcrumbs. Didn't add any cheese on the top. Served with some plain pasta. Yum!

California Grilled Veggie Sandwich

LOVED this. Didn't have yellow squash, so I subbed in some grilled mushrooms. SO delicious! Even my carnivorous husband liked it! Just like a restaurant! Will definitely make again.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Simple concept, but so delicious! I added a bit of mayo to the spinach mixture for creaminess. After stuffing, I just sprinkled the chicken with shake and bake and then popped them in the oven for 30 minutes. Yum!

Easy Meatloaf

Really good recipe. My husband was disapointed to see I was making meatloaf, but was MORE than pleasantly surprised once he tasted it. I followed the recipe, but added some minced veggies I needed to use up. So tender and yummy!

Parmesan and Basil Chicken Salad

Very good! Followed the recipe, but 2 stalks of celery pureed, one left chopped for crunch. Also added a touch of red onion as other reviewers have suggested. Yum! Restaurant quality. Will make again! May salt chicken less next time. DEFINITELY do not need to add salt to mixture.

Great flavor! Especially warm/hot. I don't recommend eating it cold as you lose some of that flavor. Served it with a kilbasa. Yummo!

Spinach Enchiladas

I'm a big fan. I haven't been able to find a "normal" beef or cheese enchilada recipe to make at home that I love. Rather would get them out at a mexican restaurant. This is a great combo of mexican flavor, but with a twist! I also did as other users recommended and added extra flavor to the spinach/cheese filling. Added garlic and taco seasoning. I also used a hot sauce versus a mild sauce. . Easy and yummy. Will make again!

Really liked this dish! Would give it 4 1/2 if I could. Simple, but so flavorful! I added extra garlic (because we love it) . I was worried that a whole jar of peppers would be too much, but it wasn't! Will make again for sure!
