Bread Pudding II

This was my first time making bread pudding and I thought it came out really well. I used 7 slices of sour dough bread and 3 eggs. I would definitely recommend this.

Easy Tilapia with Wine and Tomatoes

This was good but not great to me. I agree that a cup of wine is way too much. Also, I baked this in the oven at 350 degrees for 30 minutes and it came out perfectly.

Porcupine Meatballs III

We LOVED this!! I doubled the rice and should have doubled the sauce, but it still came out delicious. I browned the meatballs then put them in the crockpot on low for 2 hours as suggested by another reviewer. Also, I added 1 tsp of worcesteshire to the sauce. Even my one year old gave a satisfied "mmmm" after every bite. My very skeptical fiance finished the leftovers the same night that we had it for dinner!!

Zesty Porcupine Meatballs

I have made this 2 different ways. First was with the canned tomato soup. The second was with tomato sauce and it was so much better in my opinion. I doubled the instant rice and my meatballs stayed together nicely in the skillet. I added garlic powder, italian seasoning, and more salt and pepper than called for. I served this over rice, with broccoli and corn. I definately recommend making more sauce than the recipe calls for. All in all, a very good recipe. Thanks for sharing!

Healthy Turkey Loaf

I was impressed by this, however I think it needs more seasoning. As others suggested, I doubled everything but the egg, and baked at 350 for an hour. I also added ketchup and worcestire on top for the last 20 minutes. Also, I used brown rice bread crumbs instead of regular and I liked it much better. I served this with homemade mashed potatos, sweet peas, and broccoli and squash. Very healthy and I will make this again!!

Linguine with Chicken and Sauteed Vegetables

Wow this is amazing! I made only necessary changes. I used white onion because that's what I had on hand, along with broccoli and carrots. I boiled my veggies for about 2 minutes just to fit my personal taste. But other than those minor changes, I followed the recipe. I cannot even tell you how good this is...it's a must try! And the addition of squeezed lime makes this dish even more incredible. Thanks so much I will make this very often!!

The Best Meatloaf

I enjoyed this...plain bread crumbs are pretty bland though, next time I'll take another reviewer's advice and used crushed ritz crackers. But with the addition of ketchup, it was quite tasty. I made it along with mashed potatos and peas.

Chili Mac Casserole

Boudreaux's Zydeco Stomp Gumbo

The flavor of this was excellent! However, it was quite oily. And there was quite a lot of liquid compared to the meat and vegetables. I'll make this again with a few changes: Most likely I'll use less chicken broth and more flour. I'll add more meat and double the vegetables. I added okra this time, but not enough. It needs atleast 2 cups. And the seasoning could be cut down a little. Still very good flavor though. For the beer I used Coors Light.

Bubba's Jambalaya

Excellent! I made this with limited ingredients - so I still don't know it's full potential. But with just kielbasa it's so good. My husband said this was his favorite jambalaya so far. The seasonings are scaled at the perfect amount and it's just spicy enough without completing being overpowering. Thanks so much!

Terry's Texas Pinto Beans

These were AWESOME!! I gave a four just because so much more water was needed as the beans cooked. And also, the cooking time is atleast double what the recipe says. I will take others advice and soak the beans the night before from now on. I used red salsa because that's what I had on hand (I'm sure green salsa would be just as good though), and also added salt and chili powder. I had to leave out the jalapenos because my husband is a cry baby. The flavor was delicious. Oh yeah, just a note for new cooks like me - rinse the dry beans before you put them in the pot.

Chicken Breasts with Balsamic Vinegar and Garlic

This was fine - just not my thing. I skipped the flouring part since I didn't want the sliminess others mentioned. This recipe is great if you love balsamic vinegar. The mushrooms are very good.

Strawberry Spinach Salad I

I wasn't amazed at the dressing on this...it just tasted sweet - it really had no flavor. The almonds are a must on this salad. I used red onion sliced thinly and thought that it gave it a great flavor. Next time I will skip the dressing, and just add a raspberry vinegarette. I did love the spinach and strawberry together though.

Southern Chicken Fried Steak

Very good recipe. I used another reviewers idea of using an electric skillet set at 350. Fried for 10 minutes on each side and turned out great. I thought the color was very nice. I served this with homemade mashed potatos, packaged country gravy, and steamed veggies. Thanks so much! Oh yeah, I forgot to mention I used cube steak instead of veal.
