Chicken Salad

this is really good. I left out the Ginger,parsely, and used red grapes plus added some slivered almonds. Loved it! The bacon is a nice touch.

Quick-Stuff Pork Chops

This recipe is really easy and quite tasty. It was convenient to have the stuffing include a serving of vegetables. I added more than the recommended amounts of carrots, celery, and onion. I also used Bell's seasoning instead of the seperate seasonings. After cooking the pork chops 5 min on each side, mine were still uncooked on the inside-so I sliced up the chops and cooked them through-still ymmy. My husband ate it up. Great recipe for a quick dinner!

Rachel's Crockpot Seafood Cheese Dip

Broccoli Salad V

We were told to add more broccoli into our diet. I am glad I tried this one. Yum. I made the recipe as is except I used lite mayo and white wine vinegar with 3 packets of splenda. It was wonderful. Oh, I also added cheese, but I wish I wouldn't have :) This is a keeper.

Chicken Rice Casserole

This recipe was pretty good for a quick,easy dinner. I sauteed fresh mushrooms, onion, garlic, and celery prior to adding it to everything else and also added julianned carrots. I also didn't have enough mayo so I subbed sourcream for half of the mayo. I also added pepper and a couple of dashes of hot sauce prior to baking. My husband had several servings. I don't like cooking with "cream of" soups because it grosses me out, but sometimes it is just to tempting because it is easy and it usually tastes good.

Cranberry Chicken

this is baking in my oven as I type. I don't cook with canned soup as I don't think it is healthy. However, I boiled a cup of chicken stock in a box and added 1/2 cup half and half to the stock with a tbsp of corn starch whisked in. I didn't have white wine so I bravely added 1/4 cup of organic red wine. After that thickened I poured it over the chicken cutlets that were covered in the mozzarella cheese. I then followed the directions as written and baked at 325 on the convection roast setting. I am so hoping it turns out despite my brave alterations!

Dried Cherries, Pecans and Rosemary Brie en Croute

This is so good. The only thing I canged based on other reviewers was to soak the dried cherries in Grand marnier. I can't wait to make this for my next holiday party! It looks so festive.

Hot Chicken Salad IV

This recipe was so good. To cut corners I used a rotissere chicken from the store that was already cooked and cut it up. Yum,Yum. I will make this again and again. To cut calories I used low fat mayo and low fat chips-still tastes sinful!

Fruit-Topped Buttermilk Pancakes

The pancake recipe is great. My family said these were the best pancakes they ever had. They did not love the fruit topping. I liked it though! I probably won't make the topping for just myself. The pancake recipe will be a staple in our household! The search for the best one is over! also sidenote-it is best to stir the batter occassionally when cooking the cakes to decrease the "puffiness" of the batter.

Pop Cake

This is a very versatile cake. I think it is great for kids, but not for adults with developed palates. It would be a great summer treat for everyone. I made it for superbowl makingit in Chicago colors. I guess we had too much other food because no one really touched it. I may try again in the future.

Mocha Chocolate Chip Banana Muffins

I can not really rate this recipe as I subbed so much to try to go healthy. I used 1 cup applesauce instead of butter, splenda instead of sugar, and my bananas were probably not ripe enough. I also didn't have any instant coffee, so I used regular strong brewed coffee (1/8cup). They are baking right now...we'll see what happens. Everything is an experiment now that we are trying to be healthy. I gave it 5 stars though because the idea of mocha with the banana and chocolate is divine! Great idea.

Chicken Breasts in Caper Cream Sauce

Wow! Our family loved this recipe. I did double the sauce as others suggested. I made as is only subbing fat free half and half (we are trying to diet)and adding a little flour to help the thickening process. It was really great even without the yummy whipping cream. We served the chicken over couscous with a side salad-really great fast easy meal. I love meals that are this easy yet appear to be so elegant, difficult, and time consuming.

Chicago-Style Pan Pizza

Wow! This was better that any pizza place I have ever been too and I lived in Chicago for 8 years. I did add green pepper and pepperoni. My husband loved it also. We ate the leftovers until it was gone. Will make this again and again!-(5/28)update-I made this tonight and used the Bread Machine Pizza Dough recipe for the crust. I also didn't have any meat on hand so I skipped that and had a skillet with sauted mushrooms, red and green pepper, garlic, and onion with the recommended added spices/seasonings. I only had one 14 oz can of the diced tomatoes. I rolled out my crust, spooned some tomato sauce lightly on the dough, spooned on the veggies, covered it with an Italian cheese blend and baked for 25 min. (I forgot about the parmesean, but the blend had some in it). My family raved. It is hard to mess this one up!

Creamy Chocolate Frosting

This frosting was wonderful! I forgot to put the vanilla in :-(. I bet it's even better with the vanilla! It's still wonderful, though. Great flavor and consistency. There is no reason to buy frosting in the can. I also used whole milk because I didn't have condensed milk.

Fish on a Plank

I loved this! I left out the cilantro because I don't like it. Other than that, I made as is and couldn't have been happier with it. My husband loved it also. He was skeptical, but said it was a high quality meal. Yay! I loved the plank cooking also. It seemed so organic!
