Hot Chicken Salad IV

This recipe was so good. To cut corners I used a rotissere chicken from the store that was already cooked and cut it up. Yum,Yum. I will make this again and again. To cut calories I used low fat mayo and low fat chips-still tastes sinful!

Italian Nachos

This is a great appetizer to pair with an Italian meal. It is a little heavy, but so delicious. My guests loved them and so did my husband. I may try mixing marinara and alfredo next time just to lighten it up. So easy and so fast!

Quick-Stuff Pork Chops

This recipe is really easy and quite tasty. It was convenient to have the stuffing include a serving of vegetables. I added more than the recommended amounts of carrots, celery, and onion. I also used Bell's seasoning instead of the seperate seasonings. After cooking the pork chops 5 min on each side, mine were still uncooked on the inside-so I sliced up the chops and cooked them through-still ymmy. My husband ate it up. Great recipe for a quick dinner!

Green Beans With Walnuts

I love this recipe. So good and looks so impressive and "fancy" yet so easy. The walnut oil makes a big difference. I omitted the parsely because I don't like it and it was still a wonderful side dish.

Trinidad Stewed Chicken

We loved this recipe. Several things happened during making this recipe. The grocery was out of green onions so I only used white onions and I used dried celantro. Plus I forgot to buy cocunut milk, so I used 2/3 c half and half and 1/3 cup milk. I accidentally used too much oil in the beginning. With all of these substitutions and changes it miraculously still turned out delicious. My husband said he was glad I didn't use coc. milk. Also, after the chicken was done cooking, I removed it from the sauce and put it on the plate. Then I mixed white rice into what was left in the pan and served along side the chicken with a lovely pile of fresh cubed pineapple. My husband and I were both members of the clean plate club with this meal! Thanks for the post.

Bacon Water Chestnut Rolls

All I can say is bacon makes anything yummy! This recipe was no exception. It was a big hit for our superbowl party. I must admit I didn't know if I would like the stuff that went on top of them, but I was not disappointed! I will use this again and again. Great recipe.

Pop Cake

This is a very versatile cake. I think it is great for kids, but not for adults with developed palates. It would be a great summer treat for everyone. I made it for superbowl makingit in Chicago colors. I guess we had too much other food because no one really touched it. I may try again in the future.

This is basically like cold spinach dip with a packet of veg mix in it. I didn't like it at all to be honest and no one touched it at our superbowl party. too bad.

Chicago Dip

I loved this dip. It is very similar to the spinach dip I buy in the grocery in the deli. I will never buy it again though. I would rather make this. I will put more spinach in it next time because there seemed to be too much sour cream and may in comparison to the spinach, but it still tasted great!

Chicago-Style Pan Pizza

Wow! This was better that any pizza place I have ever been too and I lived in Chicago for 8 years. I did add green pepper and pepperoni. My husband loved it also. We ate the leftovers until it was gone. Will make this again and again!-(5/28)update-I made this tonight and used the Bread Machine Pizza Dough recipe for the crust. I also didn't have any meat on hand so I skipped that and had a skillet with sauted mushrooms, red and green pepper, garlic, and onion with the recommended added spices/seasonings. I only had one 14 oz can of the diced tomatoes. I rolled out my crust, spooned some tomato sauce lightly on the dough, spooned on the veggies, covered it with an Italian cheese blend and baked for 25 min. (I forgot about the parmesean, but the blend had some in it). My family raved. It is hard to mess this one up!

Chicken Breasts in Caper Cream Sauce

Wow! Our family loved this recipe. I did double the sauce as others suggested. I made as is only subbing fat free half and half (we are trying to diet)and adding a little flour to help the thickening process. It was really great even without the yummy whipping cream. We served the chicken over couscous with a side salad-really great fast easy meal. I love meals that are this easy yet appear to be so elegant, difficult, and time consuming.

Chocolate Covered Strawberries

Salmon Fillets with Creamy Dill

This was my first time making salmon. It turned out pretty good. I didn't need all of the mayo topping and used the reserve for dipping as others suggested. I think mayo on fish is really good, but I will try other ways to prepare salmon. Thanks for the easy fast recipe!

Fried Rice Restaurant Style

This was ok. Nothing like restaraunt. The sesame oil (even though used sparingly) is too overpowering. I asked our fav chinese restaraunt what oils they used for their fried rice and they said only veg oil. Skip the sesame oil and it will turn out much better! It wasn't bad though. My husband loved it!

Sweet and Sour Chicken I

We loved this. My 14 yr old wanted Chinese takeout and we are trying not to dine out so I told her I would make it at home. She was disappointed until she tried the at home version. My whole family thought this was better than any takeout! yeah!

Baked Honey Mustard Chicken

This was very easy to prepare and my family loved it. My 14 yr old said "5 stars"! I was out of regular mustard so I mixed honey mustard, dijon mustard,and honey with the herbs/spices. It turned out good. Served with brussel sprouts and stuffing. I also made a sandwich for lunch the next day adding watercress. It was even better the next day!
