The Best Banana Bread

Reviewed: Sep. 13, 2008
this is the same recipe my mom uses except she uses 1/2 cup milk in hers and another 1/2 cup sugar. It is wonderful. Perhaps the milk makes the bread even more moist???!!! I did see where one person thought it was too dry. Oh well got to stick with my mom!

Gramma's Apple Bread Pudding

Reviewed: Sep. 11, 2008
This was really good! I have to say I did not follow the recipe as written-although I do not disagree with it! I made Apple Strudel Muffins from a recipe from this site, but subbed applesauce for the butter and they came out dry. Instead of throwing them away, I made this bread pudding. I made as is, only there were apples already in the muffins and there was already a lot of cinnomon, so I didn't add anymore. This recipe saved the muffins and I think I will make it with this two step process again! Thanks for the save!

Apple Strudel Muffins

Reviewed: Sep. 11, 2008
My muffins were a little dry. I did sub applesauce for the butter. I think next time I will add the butter and use 1/2 cup applesauce. I HATE dry muffins! I may grate the apple next time instead of having chunks also. I don't know maybe this isn't the muffin for me! Update: I used my dry muffins to make Gramma's Apple Bread Pudding from this site. Wow-so good. Such a great combo. Sooo if you have leftover muffins that are not edible, but not spoiled-make bread pudding with them!

Chocolate Chip Banana Muffins

Reviewed: Sep. 7, 2008
I think I may have went too far in using all whole wheat flour, but the muffins still came out quite decadent. will make again using white flour, but still subbing the butter and sugar for applesauce and splenda.

Mocha Chocolate Chip Banana Muffins

Reviewed: Sep. 7, 2008
I can not really rate this recipe as I subbed so much to try to go healthy. I used 1 cup applesauce instead of butter, splenda instead of sugar, and my bananas were probably not ripe enough. I also didn't have any instant coffee, so I used regular strong brewed coffee (1/8cup). They are baking right now...we'll see what happens. Everything is an experiment now that we are trying to be healthy. I gave it 5 stars though because the idea of mocha with the banana and chocolate is divine! Great idea.

Pizza Dough III

Reviewed: Aug. 22, 2008
seems sticky, but it makes it spread well. if you just use a lot of flour to spread it out, you'll be fine. I am lazy and I put all of the ingredients in my bread machine on the dough cycle and it works great. I don't change any of the ingredients. this is a keeper and the only pizza dough recipe I use. My friends rave about my pizza!

Stuffed Shells IV

This was really good. I added some chopped green pepper, but that is all I changed. I don't know if that made it better or not. We will be enjoying leftovers!

Italian Bread Using a Bread Machine

Reviewed: May 16, 2008
This was good. I think I need to add more salt. It was a bit more dense than I like, but overall I am happy to be making my own bread and my husband loves the fact that I am using the bread machine that I just "had to have"! I will have to work on perfecting my technique!

French Spring Soup

Reviewed: May 16, 2008
Wow! We loved this! I did use only chicken stock and no water. I also added cut up cooked chicken tenders. I added grated fresh garlic in with the onions and leeks. I used half and half instead of cream. I also added several seasonings-salt, white pepper, Red Robin seasoning, garlic powder, and lemon pepper. I also added a few dashes of hot sauce. I didn't alter the veggies that I used. I used exactly what was written. I only subbed baby carrots as the grocery didn't have any big ones. I also used more rice than recommended. It made the soup thicker. I was awesome though, I must say. I made Italian bread to go with it. from this site (Italian Bread Using the Bread Machine). Everything was yummy and I felt good about eating all of those veggies! Leeks are one of the healthies things you can eat! We will be eating this at least once a month! thanks.

Broccoli Salad V

Reviewed: Jan. 24, 2008
We were told to add more broccoli into our diet. I am glad I tried this one. Yum. I made the recipe as is except I used lite mayo and white wine vinegar with 3 packets of splenda. It was wonderful. Oh, I also added cheese, but I wish I wouldn't have :) This is a keeper.

Bacon Chicken and Dumplings

Reviewed: Jan. 6, 2008
This was really good. I only give it 4 stars because I added more seasoning and I think it would be bland without it. I added Italian seasoning and extra poultry seasoning (Chef Paul Prudhomme's Magic Seasoning Blends-Poultry Magic). I didn't change the amounts of liquids as the other reviewers did, but I did add a cornstartch mixture of 1 tablespoon cs and 1 tablespoon h2o when I added the half and half-(I used fat free half and half). I also was lazy and used Pillsbury grands biscuit dough and cut them in quarters-which was way too big.In the future I will make them much smaller. The cooking times were perfect in this recipe. I also added carrots and celery when I added the broth and I used one more pototato. perhaps that is why it worked out to use so much liquids. Anyway I give this recipe 4 stars just because I felt it needed some alterations. I will continue to use it as a base though. Yummy! thank you.

Chicken Rice Casserole

Reviewed: Dec. 19, 2007
This recipe was pretty good for a quick, easy dinner. I sauteed fresh mushrooms, onion, garlic, and celery prior to adding it to everything else and also added julianned carrots. I also didn't have enough mayo so I subbed sourcream for half of the mayo. I also added pepper and a couple of dashes of hot sauce prior to baking. My husband had several servings. I don't like cooking with "cream of" soups because it grosses me out, but sometimes it is just to tempting because it is easy and it usually tastes good.

Chicken Salad Sandwiches

Reviewed: Dec. 11, 2007
Very yummy. I made as is, but added a secret ingredient. A couple tablespoons of honey bbq sauce. I discovered this when using left over bbq chicken which left a hint of bbq sauce in the salad. It makes a great recipe even better. I challenge you to include some bbq sauce! (I used Jack Daniels honey bbq sauace)
