Whole Wheat, Oatmeal, and Banana Pancakes

Reviewed: Sep. 9, 2012
These pancakes were fantastic! I made the cinnamon applesauce version, as we are not big banana flavor fans here, and they were so moist and delicious! Even my husband, who never likes pancakes, gobbled them up. I made exactly to recipe and they were perfect. Very light and fluffy and healthy :)

Simple Hamburger Stroganoff

Reviewed: Oct. 13, 2011
This recipe was so simple and so easy! I, too, cut the cream cheese down (6 oz as I used a pound and a half of meat), added garlic and onion powder, a little bit of black pepper, used one can of CoM and two packets of brown gravy mix (reduced sodium kind). I cooked everything for the sauce in the skillet and ladled it over the egg noodles. My 3 very picky boys devoured it. Great recipe that you can tweak to your liking :)

Mom's Zucchini Bread

Reviewed: Sep. 16, 2011
I used this recipe for my first time ever baking zucchini bread and I was not disappointed! I followed a few other reviewers advice and substituted 1/2 applesauce for the oil and I used only whole wheat flour, decreased sugar to 2 cups and used 1 white, 1 brown, and added 1 tsp of nutmeg. I also increased the zucchini to 3 cups and it came out perfect!! Deliciously moist and flavorful!! I had enough for 1 loaf and 3 jumbo muffins, which my two boys and bf gladly gobbled up. :)

I made this almost exactly as written, just used Italian seasoned breadcrumbs instead. It was superb! So easy, definitely a keeper :)

My Navy Bean Soup

Reviewed: Jan. 8, 2009
I made this tonight with few changes. I cut it in half and used Swanson reduced sodium broth instead of stock. I also added water to it, to cut the saltiness. I used extra carrots and onion, and toward the end used a potato masher to thicken it up. I served with warm cornbread and my boys ate it all up. It was awesome! A great recipe to tweak to your liking.

Turkey Burger Pie

Reviewed: Aug. 14, 2007
This is such an easy recipe! I made it for my 3 very picky boys (including my boyfriend) and they loved it! They were all done eating before me and that's a first. I followed earlier reviewers advice and added Worcestershire, seasoned salt, and pepper to my turkey and then mixed in a bag of fresh frozen mixed veggies with some extra Cheddar. It has become a weekly appearance on my menu :)
