Coconut Macaroons III

Reviewed: Dec. 28, 2009
Outstanding! The only adjustment that I made was 1 tsp vanilla, and 1 tsp almond extract. I used a cookie scoop (sprayed first with Pam) and all were shaped beautiful! Using my silpat, there were no sticking problems. After baking and cooling, I drizzle with 1/2 cup semi-sweet chocolate chips (microwave 1 min. 15 sec). Recipe yielded 30 cookies; baked for 16 minutes. WOW - so awesome! Great for gift giving or taking to a party.

Easy Pie Crust

Reviewed: Dec. 28, 2009
I would never have believed how outstanding this pie crust could be! Reading the reviews and rating, I gave it a try. WOW! I stopped making homemade crusts years ago and now Pillsbury just lost another customer! The only change that I made was to decrease the salt to 1/2 tsp.; I prebaked the shell 15 minutes at 400 degrees for quiche. I make lots of pies/quiche - what a wonder find! Thanks and enjoy!

Peach Muffins

Reviewed: Jul. 18, 2009
These muffins are awesome! The only changes that I made to the recipe was increasing the diced peaches to 3 cups and adding 1/2 cup milk. They were so moist, even the next day. The recipe make 22 regular size muffins; I froze half. Thanks for sharing this outstanding recipe which is a real keeper!

To Die For Blueberry Muffins

Reviewed: Aug. 23, 2008
This recipe is a real keeper. I made a few adjustments. I added 2 teaspoons of lemon extract to the batter as I think lemon and blueberries compliment each other. For the topping, I used 2/3 cup raw sugar, 1/4 cup flour, 1/4 tsp cinnamon, and 2 Tbsp butter. I made 12 regular size muffins, cooked at 400 degrees for 18 minutes. Also, for easier removal, used muffin cup liners that I sprayed with Pam.
