Potato Leek Soup I

I did add a carrot, and it turned out orange! So I called it orange soup and everyone loved it. I really like the fact that this is a creamy soup without milk...in fact the only dairy included is butter to melt the leeks, and one could use olive oil instead. Very tasty despite its lack of salt (when using low salt broth and no boullion cubes and no extra salt) or fats or meat. Healthy and yummy!

Rhubarb Strawberry Jam

Really great rhubarb flavour! We thought that letting the sugar and rhubarb sit overnight was totally unnecessary, so we let the sugar sit on the rhubarb for a couple of hours to get juicy, then started boiling on really low. Boiled for about an hour, until the rhubarb was broken and jammy consistency. Added jello, put in jars, and let cool. It's great! We also thought 3 cups of sugar was a bit over-the-top, so used only 2. Next time may use only 1.5 cups. Awesome and easy!

Easy and Elegant Pork Tenderloin

Spiced Pumpkin Seeds

Excellent snack, and I've never had success with pumpkin seeds before! They smell really vinegary when baking, and my boyfriend was wary...but once we took them out, and he tried one, he ate the whole bowl! "They sure taste better than they smell" he said. Thanks for this one!

Zucchini Bites

They are like little mini quiches! Hands down my favorite zucchini recipe! Made just as instructed, no changes, but had to add more flour to make a batter in the last step. This made 24 mini muffins plus a bit. You have to try this! Thanks for a great recipe!

Pork Medallions

Delish! I made double the sauce, and added about half a cup (or was it a cup...) of white wine to the sauce. Very tender and tasty. I was worried about the scent of the rosemary being so strong during cooking, but I went out and bought savory specifically for this recipe, and it toned down the rosemary just right. Served on rice it was filling and healthy. I will definitely make this creamy dish again!

Yummy Honey Chicken Kabobs

So delicious, I wanted to make them again the very next night! I agree with previous posts: make twice the sauce, and marinate for as long as you can...I did for just over an hour and they turned out very flavorful. DO NOT use vegetable oil, I had to throw that marinade out...use olive oil or grapeseed or sunflower oil, something that won't take away from the honey and the garlic. Thanks for this fantastic and reusable recipe...next time I'll mince the garlic instead of just chunks, and I'll add more garlic, that way it's like yummy honey garlic chicken...and I imagine that this sauce would work very well with wings too!

Green Beans with Cherry Tomatoes

Oh so yummy! I did use 2 cloves of garlic and a chopped shallot in place of the garlic salt, and omitted the sugar. Even without the green beans, this treatment of tomatoes and basil is a versatile base! I could use it on pasta, chicken, pork...lovin' it!

Cream of Asparagus Soup I

Delish! Really good soup...I hummed and hawed about the puree thing, and in the end decided to do it, and I'm glad I did. It took no time at all in my blender, and the smooth texture is fantastic. I added minced garlic to simmer, 3 potatoes rather than just the one called for...and I thought that chicken broth AND chicken boullion was unneccessary, so I stuck with 5 cups water 5 tbsp boullion, and it worked out well. Not too salty, but I didn't add soya sauce either, which I think only adds more salt. Great creamy soup, I'll freeze some for the autumn months! Thanks for the post!

Lime Garlic Chicken

Awesome! The boys ate it right up, and then kept picking at the leftovers...I had to hide them so I'd have something for lunch the next day! I sauteed a bit of onion with the garlic, and used less butter than called for...spiced up the flour with some garlic powder and a little chili powder...and I used the juice of a lemon instead of a lime, cuz that's what I had in the house...it was great, and next time I'll buy a couple limes special. I served it in pita pockets with fresh greens and light cheddar cheese. Thanks all!

Fresh Broccoli Salad

Delicious! I will admit to being trepidatious at first, but all of the flavors blend very nicely. I also used red wine vinegar instead of white, cut down on the sugar and onions, and used "real" bacon bits instead of frying the bacon...it was great, and we are happy to have added a new salad to our repertoire.

Creamy Rice Pudding

This is very tasty...just like I thought it should be. My Mom tried to tell me to mix my cooked rice with vanilla pudding, and I just couldn't believe that that was the best recipe out there. This is great, much better than the alternative!

Roquefort Pear Salad

This is delicious, a definite winning flavor combination! The recipe is a bit big, so I don't add the dressing to the whole thing...that way I can have leftovers that aren't soggy the next day for lunch. I am reminded how much I love pears and cheese! I will be making this again soon.

This is just a delicious marinade for chicken! Next time I will add mushrooms to the kabobs, and really use 2 pounds of chicken. I did marinate them overnight - and I'd do it again!

Steak Tip Marinade

Really simple, these ingredients are always around...we used half the sauce and stabbed the meat all over, marinated overnight, and these cheap steaks were GREAT! Super flavor, and tender!

Chicken Pot Pie II

Delicious! We both loved it...I made it in pie shells instead of a casserole dish, and had to make 2 pies with this recipe! So that's 4 pie shells, 2 bottoms and 2 tops. Instead of 2 cups of frozen vegetables I boiled a sliced carrot and a sliced potato for a few minutes, then added frozen peas and frozen corn to make up just over 2 cups. And we didn't have enough leftover chicken to make a pound and a half, but I had about 2 cups of cooked chicken, and that was enough. Very good flavor, go easy on the thyme, though. And of course, my man eats it with ketchup, cuz it tastes better that way! Thanks for the great recipe!

Amazing Pork Chops in Cream Sauce

Great recipe, great sauce! I did not have to use heavy cream, as we watch our calories, so after cooking the pork in the wine, I removed the meat, added mushrooms and some garlic, and once they were cooked, added about a quarter cup of flour, to make a roux. Then slowly stirred in milk (1% is all we buy) until it was all mixed in and creamy. It turned out great, and I used some parsley and savory because I had some on hand...very good mushroom sauce, which I will use in place of mushroom soup in recipes from now on! Thanks!

Fried Rice Restaurant Style

Great! And all the comments were good too...I used leftover rice, and the only veggies I had were peas and cauliflower...stirfried them with some garlic, added eggs with soy sauce, pepper, and a bit of hoisin sauce mixed in, cooked with the veggies and added the rice. It's simple and versatile and yummy...and a one wok dish! Thanks!
