Roasted Pork Loin

Reviewed: Jul. 8, 2007
I made this roast, and my house smelled wonderful while it was cooking! The roast had too many flavors, though, I think. The wine sauce was just too much...if I make it again, I'll go easier on the rosemary, and maybe just serve a brown gravy with it, wine in a glass!

Marinated Chicken Pita Sandwich

Reviewed: Aug. 7, 2007
I was very excited to try this recipe...it sounded delicious, and all the ingredients were exciting! When I made it however, I was very disappointed that the chicken tasted just like olive oil, and nothing else! I marinated overnight, and was really looking forward to a tasty dish, and it was all delicious, except for the main part, the chicken marinade. If I make it again, I may not use any oil at all, just the lemon juice, and I'll add more fresh herbs to the marinade.

Easy and Elegant Pork Tenderloin

best and easiest pork tenderloin ever! I have tried other recipes, and none of them measure up to this first and simplest one...you can't mess it up!

Spiced Pumpkin Seeds

Reviewed: Nov. 4, 2007
Excellent snack, and I've never had success with pumpkin seeds before! They smell really vinegary when baking, and my boyfriend was wary...but once we took them out, and he tried one, he ate the whole bowl! "They sure taste better than they smell" he said. Thanks for this one!

Pumpkin Maple Pie Supreme

this makes delicious pie, and not as strange tasting as you may think...I like the idea of using the natural sweetener of maple. Thanks for this one!

Pollo Fajitas

Reviewed: Mar. 31, 2008
I really enjoy the flavor of this marinade, but like others I added the lemon juice and some oil to it. I would have liked to have extra lemon juice to sprinkle over top after the chicken was cooked, but I used it all in the marinade. I did cook the chicken in some of the marinade as cooking sauce, but just a little of it. Next time, I will not put as much soy sauce or worchestershire, and would add more hotsauce, as it wasn't spicy enough for us. Good marinade, thanks!

Pork Medallions

Reviewed: Apr. 1, 2008
Delish! I made double the sauce, and added about half a cup (or was it a cup...) of white wine to the sauce. Very tender and tasty. I was worried about the scent of the rosemary being so strong during cooking, but I went out and bought savory specifically for this recipe, and it toned down the rosemary just right. Served on rice it was filling and healthy. I will definitely make this creamy dish again!

Grilled Pork Tenderloin with Balsamic Vinegar

Reviewed: May 29, 2008
Very very good meat! I doubled the garlic and used red wine vinegar instead of balsamic...I was wary of rosemary AND red wine vinegar, as both of these are things I have in my cupboards from failed recipes in the past. But on the barbeque this tenderloin was absolutely delicious. I saved the marinade to pour over the meat when it started to look dry towards the end of the cooking time, and it was a good choice.

Easy Cheesy Chicken Bake

Reviewed: Jun. 15, 2008
Dee-lish! I used a cheese sauce packet mixed with milk and water instead of the can of soup...and I did the broccoli on the side because my casserole dish wasn't big enough...this was very tasty, tender chicken, and the potatoes, sliced about an inch thick, were great too. Thanks for this easy meal idea!

Yummy Honey Chicken Kabobs

Reviewed: Jul. 2, 2008
So delicious, I wanted to make them again the very next night! I agree with previous posts: make twice the sauce, and marinate for as long as you can...I did for just over an hour and they turned out very flavorful. DO NOT use vegetable oil, I had to throw that marinade out...use olive oil or grapeseed or sunflower oil, something that won't take away from the honey and the garlic. Thanks for this fantastic and reusable recipe...next time I'll mince the garlic instead of just chunks, and I'll add more garlic, that way it's like yummy honey garlic chicken...and I imagine that this sauce would work very well with wings too!

Southwestern Chicken Barley Soup

Reviewed: Jul. 10, 2008
Good hearty soup for cool evenings...I added some hot sauce instead of green chilies, which are hard to find here, otherwise kept the recipe basically the same. Thick and filling!

Cream of Asparagus Soup I

Reviewed: Jul. 10, 2008
Delish! Really good soup...I hummed and hawed about the puree thing, and in the end decided to do it, and I'm glad I did. It took no time at all in my blender, and the smooth texture is fantastic. I added minced garlic to simmer, 3 potatoes rather than just the one called for...and I thought that chicken broth AND chicken boullion was unneccessary, so I stuck with 5 cups water 5 tbsp boullion, and it worked out well. Not too salty, but I didn't add soya sauce either, which I think only adds more salt. Great creamy soup, I'll freeze some for the autumn months! Thanks for the post!

Old-Fashioned Potato Soup

Reviewed: Sep. 6, 2008
Delicious...my boyfriend loves it, and I thought the thyme at the end was a bit too much, but it does add a unique and not unpleasant flavor...next time I'll use a smaller pinch. Otherwise, very good soup, and lower in fat using 1% milk, which didn't make it runny at all. Thanks!

Lime Garlic Chicken

Reviewed: Sep. 14, 2008
Awesome! The boys ate it right up, and then kept picking at the leftovers...I had to hide them so I'd have something for lunch the next day! I sauteed a bit of onion with the garlic, and used less butter than called for...spiced up the flour with some garlic powder and a little chili powder...and I used the juice of a lemon instead of a lime, cuz that's what I had in the house...it was great, and next time I'll buy a couple limes special. I served it in pita pockets with fresh greens and light cheddar cheese. Thanks all!

Fresh Broccoli Salad

Reviewed: Sep. 22, 2008
Delicious! I will admit to being trepidatious at first, but all of the flavors blend very nicely. I also used red wine vinegar instead of white, cut down on the sugar and onions, and used "real" bacon bits instead of frying the bacon...it was great, and we are happy to have added a new salad to our repertoire.

Roquefort Pear Salad

Reviewed: Oct. 1, 2008
This is delicious, a definite winning flavor combination! The recipe is a bit big, so I don't add the dressing to the whole thing...that way I can have leftovers that aren't soggy the next day for lunch. I am reminded how much I love pears and cheese! I will be making this again soon.

Chunky Tomato Potato Soup

Reviewed: Oct. 5, 2008
A very good hearty soup. I had to cook it quite a bit longer than specified here though, my potatoes and carrots were still raw at the end of the 20 minutes. Still, when it was done, it was delicious!

Cranberry Spinach Salad

Reviewed: Oct. 5, 2008
I really liked this salad...I would use less dressing next time, it is a little strong. I think this dressing could also be substituted with any oil and vinegar type dressing that you enjoy. Delicious though, and fresh.

Italian Leafy Green Salad

Reviewed: Oct. 12, 2008
Tasty salad...I bought a package of mixed salad greens that included radichio, and used 5 cups of that. I also only used 3 tbsp of grapeseed oil and 3 tbsp of balsamic vinegar for the dressing, and the flavor was good. And this is a big salad, so if you're only feeding 2 or 3 people, just leave the dressing on the side, peeps can add their own to taste. The dressing was tasty, not what I had expected. Thanks for the recipe, I'll be making it again!
