Laura's Unbelievable Chicken and Pasta

Reviewed: Nov. 12, 2014
Pretty good. I like the healthy spinach, but it does overpower the other flavours a bit. Nicely cheesy - not enough tomatoes in this recipe. Good way to use frozen cream cheese too.

Banana Apple Bread

Reviewed: Oct. 5, 2014
Absolutely delicious! I changed a few things, to make it less moist, as many reviews have commented. So, the details here are as much for myself - for when I make it again next week - as for you all! Only a cup and a half of sugar, 2 eggs not 3, half a cup butter and half of applesauce, only 3/4 cup of the yogurt, only 1 teaspoon of vanilla, and I left out the walnuts. It made 24 muffins and one mini loaf. Left the topping out completely, same with the garnishing fruit. Only had to bake for about 32 minutes on 350, no tin foil necessary. Really awesome flavour, texture, and smelly goodness for the loving household! I will be sharing this recipe with the home ec class at my school!

Grandpa's Garden Chicken Soup

Reviewed: Sep. 9, 2014
Really good flavour by using the whole chicken. It all disappeared, so we all liked it, including baby.

Chef John's Tomato Sauce

Reviewed: Sep. 9, 2014
Really nice consistency, but too sweet for our tastes. I think the tomato paste and sweet baby tomatoes were enough without sugar. When making this next time, I'll omit the sugar and just add to taste. I used one can of tomatoes and cut up a bowl of little ones from our harvest.

Rhubarb Cake I

Reviewed: Sep. 8, 2014
Too , the topping really just melted off and burnt in the bottom of my oven, and it was too too moist. I won't be making this recipe again.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Sep. 7, 2014
This is a keeper! I made half of the recipe, and after 45 minutes it was deliciously crispy. Used a bit less cheese than called for too.

Shish Tawook Grilled Chicken

Reviewed: Aug. 28, 2014
This is just a delicious marinade for chicken! Next time I will add mushrooms to the kabobs, and really use 2 pounds of chicken. I did marinate them overnight - and I'd do it again!

World's Greatest Vegetable Broth

Reviewed: Aug. 23, 2014
Really good stock! This is a HUGE recipe though - I do a lot of cooking, and I do not have a pot big enough for this stock! I used both of my soup pots, and that worked. It is an awful lot of shopping and chopping and peeling for a couple of ice cube trays of stock in the end, and I think the veggie puree will take longer to use up than the stock itself. Next time I would use only two cloves instead of three, I would replace the green peppers with yellow or orange ones, and I would not add more turnips than called for. Overall, very healthy and tasty stuff.

Amazing Lentils and Kale

Reviewed: Aug. 19, 2014
Glad I halved the recipe, as other reviewers suggested. Hubby loved it, and said it was a keeper, and he's pretty picky.

Fresh Cherry Cobbler

Reviewed: Aug. 15, 2014
Good, but too sweet. I should have done as other reviewers suggested and halved both sugar amounts. The cherries retain their flavour nicely, which is not my general experience when baking with them. Used gluten-free flour, and it turned out to be a nice cake-like dish. Got very soggy the next day though - if I make this again I will make sure we have company so it all gets eaten while it's still warm.

Creamy Tomato And Cream Cheese Soup

Meh. Too watery for me. I loved all of residents, but didn't love the final product. And by the way, this recipe makes A LOT of soup!

Bundt Dutch Apple Cake

Reviewed: Aug. 3, 2014
My hubby wanted this for his birthday cake, and he really liked it. A bit bland for the kids, though. I did as another reviewer suggested, and replaced the oil with half buttermilk and half applesauce, and I thought this made it nice and moist. Also used gluten-free flour, and it turned out to be a nice batter.

Fresh Southern Peach Cobbler

Reviewed: Jul. 17, 2014
Really good! Just what I was craving. I think it could use more cobbler though, and would likely double that next time. Also, I left out the salt, as it is totally unnecessary, I used gluten-free flour, and I left out the cinnamon sugar topping, because I thought the recipe had enough cinnamon already. I really liked this, and made some for a gluten-free friend, who loved it as well!

Slow Cooker Beef Stew I

Reviewed: Jul. 15, 2014
Really really good as is. I did brown the meat first, otherwise left it as written. Good thick juice, although I thought at first that there wasn't enough liquid when I turned it on. I will add peas next time.

Buffalo Chicken Chili

Really good - pretty hot for us though, even though I just dashed in less than half a cup of Frank's. The recipe makes a good thick chili sauce.

Grandmother's Buttermilk Cornbread

Reviewed: Jun. 6, 2014
So good - I too will stop searching for a good cornbread recipe! I used gluten-free flour, and, miracle of miracles, these little babies rose and were spongy and golden! I made 6 oversize muffins (you know, the ones in the silicone muffin mold) and 12 mini-muffins. The little ones needed 16 minutes, and the bigger ones took 23 minutes. So perfect, even the baby gobbled them up. Thanks - must be the buttermilk!

No-Noodle Zucchini Lasagna

Reviewed: Feb. 24, 2014
Great flavour, but really runny. Also, this made way too much for the two of us, even with leftovers for the next day. I read the idea of putting raw rice in the bottom to soak up the liquid, and while I think this would work, rice just doesn't seem to belong in lasagna for me. Sweating the zucchini was a good idea, but the mushrooms give a lot of liquid when they cook too. Just too runny for my taste, but I do like the zucchini strips idea. Next time I'll likely use some noodles too, just to soak up the liquid, and maybe omit the mushrooms, or at least use less.

Turkey and Quinoa Meatloaf

Reviewed: Feb. 18, 2014
Really liked this meatloaf! Took the submitter's suggestion and used an extra egg, but it was still too liquidity to form a loaf. Next time I will use more quinoa to firm it up. So, I used a loaf pan upside down over the mess, and removed it to brush with the sweet mixture with about 15 minutes left. The flavour was really really good!

Janine's Best Banana Bread

I loved the fact that this recipe doesn't call for any oil or vanilla. It tastes great just as is - although I omitted the salt, as it is unnecessary. Nice banana flavour to this bread!

Kristen's Potato Leek Soup

Reviewed: Jan. 8, 2014
Delicious soup - and very few ingredients needed. I always leave out the salt, as it is unnecessary, and use my hand mixer to blend a bit in the pot. Great as frozen leftovers too. This recipe is a favourite in our house. Thanks!
